About The Position

88 Tactical is a unique "guntry club" experience combining a premiere dining program, world-class training, and unmatched hospitality. Our Founders Club restaurant is known for scratch-made food, a strong kitchen culture, and high-volume service. We are looking for a dedicated, hands-on Assistant Kitchen Manager to support daily operations and help lead our kitchen team. The Assistant Kitchen Manager supports the Executive Chef and Kitchen Manager in the overall success of the Founders Club kitchen. This role helps oversee food prep, service flow, staff training, quality control, and kitchen organization. The right candidate is dependable, calm under pressure, and committed to delivering consistent, high-quality food experiences.

Requirements

  • 1-2 years of experience in a leadership role in a high-volume kitchen (Lead Line Cook, Sous Chef, etc.).
  • Strong communication and organizational skills.
  • Ability to thrive in a fast-paced environment.
  • Knowledge of food safety, sanitation, and kitchen best practices.
  • Reliable, positive attitude, and strong work ethic.
  • Weekend and evening availability is required.

Nice To Haves

  • Previous experience in scratch kitchens.
  • ServSafe certification (or willingness to obtain).
  • Experience with scheduling, ordering, or inventory is a plus.

Responsibilities

  • Support the Kitchen Manager in daily operations, including opening/closing duties and shift management.
  • Lead and motivate kitchen staff during service to maintain smooth operations.
  • Assist with scheduling, communication, and task delegation.
  • Maintain a clean, safe, and organized kitchen environment at all times.
  • Ensure all dishes meet 88 Tactical's quality and presentation standards.
  • Help manage prep lists, production levels, and par sheets to stay ahead of volume.
  • Follow all recipes and assist in developing or refining menu items as needed.
  • Train new hires on kitchen procedures, equipment, and safety.
  • Provide ongoing coaching to improve speed, accuracy, and teamwork.
  • Enforce kitchen standards, safety protocols, and proper food handling.
  • Assist with inventory counts, ordering, and product rotation.
  • Reduce waste and support cost-control initiatives.
  • Communicate any shortages, equipment issues, or operational concerns promptly.
