About The Position

The Assistant Executive Steward is responsible for training stewards, verifying daily assignments through kitchen walks, and ensuring sanitation standards and cleanliness in all kitchen areas. This role involves cleaning and sanitizing kitchen areas, operating the dishwashing machine safely, and maintaining the organization, sanitation, and cost-effectiveness of the operation in line with food and beverage goals. The position also includes supervising operational functions, guest service delivery, equipment inspections, and managing inventory for dinnerware, flatware, and glassware.

Requirements

  • High School Diploma or Equivalent
  • Valid Driver’s License
  • Five years of experience in stewarding, kitchen maintenance, kitchen operations or similar.
  • Knowledge of food and beverage service operation is preferred.
  • Organization - The ability to stay organized, prioritize tasks and meet deadlines.
  • Adaptable to Change - Must be willing to change priorities quickly and accept new direction.
  • Writing - Communicating effectively in writing as appropriate for the needs of the audience.
  • Basic Computer Skills - Using basic computer hardware and software (e.g., personal computers, word processing software, Internet browsers, etc.).
  • Reading Comprehension - Understanding written sentences and paragraphs in work related documents.
  • Oral Comprehension - The ability to listen to and understand information and ideas presented through spoken words and sentences.
  • Analytical/Critical Thinking - The ability to gather and organize information using a logical and systematic process; recognize patterns and relationships in complex data; examine data to identify implications, problems and draw appropriate conclusions; generate alternative solutions to problems; evaluate strengths, weaknesses and consequences of alternative solutions and approaches to solving problems.
  • Customer and Personal Service - Knowledge of principles and processes for providing customer and personal services. This includes customer needs assessment, meeting quality standards for services, and evaluation of customer satisfaction.
  • Number Facility - The ability to add, subtract, multiply, or divide quickly and correctly.
  • Regularly walks, works on a computer, and lifts up to 50 lbs.
  • Occasionally sits and stands.

Responsibilities

  • Coach, counsel, track attendance, verify payroll, and schedule the steward team according to business levels.
  • Train new stewards as required.
  • Supervise assigned operational functions within the department consistent with the strategic plan, fiscal budget, and the company’s short term and long-term objectives.
  • Supervise the delivery and measurement of guest service consistent with the company’s core service standards and brand attributes.
  • Make routine inspections of all equipment and kitchen areas to ensure that cleanliness and sanitary procedures are maintained.
  • Requisition new and replacement equipment as needed.
  • Approve requisitions related to all cleaning supplies and equipment and monitor supply to ensure costs are kept to a minimum without losing quality and usage of materials.
  • Maintain inventory and record keeping for all dinnerware, flatware and glassware, glass and silver.
  • Ensure proper set-up, breakdown and maintenance of all special events.
  • Perform all other duties as assigned.
