About The Position

As our Assistant Executive Steward, you'll help lead the operation that keeps our award-winning restaurants, banquet venues, and convention spaces running seamlessly. You'll inspire and develop a large team, ensure the highest standards of sanitation and safety, support exciting large-scale events, and collaborate with leaders across Food & Beverage, Culinary, and Engineering. Requirements

  • High School diploma or GED equivalent.
  • A minimum of 5 years experience as a Stewarding Supervisor.
  • The ability to make decisions in a fast-paced environment is essential.
  • The flexibility to work nights, weekends and holidays as required.
  • Mathematical ability; budgets, payroll, etc.
  • Written communication skills; standard forms, data entry and documentation.
  • The ability to read is essential; budgets, standard forms, performance reviews, schedules and daily paperwork.
  • The ability to speak and understand the English language; must continuously communicate with a degree of professionalism and accuracy.
  • Working knowledge of Microsoft Office; Word and Excel and Lotus.
  • Knowledge to be able to operate a dish machine and floor cleaners.
  • A valid NYS Drivers license.
  • The ability to work under extreme temperatures; 0-110 degrees.
  • Ability to stand/walk for long periods of time and lift up to 51 - 60 pounds.

Nice To Haves

  • College degree or some level of secondary education preferred.

Responsibilities

  • Lead, coach, and develop stewarding supervisors, lead stewards, and team members, creating a culture of accountability, teamwork, and continuous improvement.
  • Oversee daily stewarding operations across restaurants, banquets, and large-scale events, ensuring the right resources are in place to support every service.
  • Maintain the highest standards of sanitation, food safety, OSHA compliance, and health department regulations while promoting safe work practices throughout the department.
  • Coordinate dishwashing, pot washing, kitchen sanitation, banquet setup support, and stewarding services for conventions, concerts, and special events.
  • Monitor staffing, scheduling, labor productivity, and overtime to maximize efficiency while maintaining excellent service levels.
  • Manage inventories of china, glassware, silverware, smallwares, and cleaning supplies to ensure operational readiness and minimize waste.
  • Partner with Culinary, Banquets, Engineering, Housekeeping, Purchasing, and Food & Beverage leaders to support seamless daily operations and memorable guest experiences.
  • Conduct routine inspections to ensure stewarding areas remain clean, organized, well-maintained, and fully operational.
  • Assist with budgeting, cost control, equipment maintenance, payroll review, and operational reporting while identifying opportunities to improve processes and reduce breakage.
  • Step into the Executive Steward's leadership role when needed, ensuring operations continue to run efficiently while maintaining exceptional service and quality standards.
