The Assistant Director of Food & Beverage will plan, design, implement, and control Food and Beverage operations, ensuring profitability, efficient operations, and adherence to established standards for all food outlets including Bin 47, The Shed, Blending Room, & Banquets. This role involves establishing and maintaining standards for food and beverage quality, presentation, handling, sanitation, and safety. The position also includes participating in the preparation of the annual operating budget and financial plans, establishing and maintaining budgeted supply and labor costs, and conducting industry research to project future trends. Ensuring the security of all Food & Beverage supplies, equipment, and inventory is crucial. The role requires regular communication with all departments, communicating with Food & Beverage Managers during service, and conducting frequent inspections of dining, kitchen, and storage areas. The Assistant Director will also participate in the property’s Manager on Duty and Lobby Ambassador program as needed, ensure timely and courteous follow-through on requests, and select, supervise, train, develop, schedule, discipline, and counsel staff. This role demands positive leadership characteristics that empower and inspire employees, provide timely formal assessments, and perform in the capacity of any supervised position as needed. Training on job and Marriott standards will also be a responsibility.
