This role is responsible for planning, designing, implementing, and controlling Food and Beverage operations to ensure profitability, efficient operations, and adherence to established standards for all food outlets, including Bin 47, The Shed, Blending Room, and Banquets. The position involves establishing and maintaining standards for food and beverage quality, presentation, handling, sanitation, and safety in alignment with property standards and applicable regulations. It also includes developing and implementing policies and procedures, participating in the preparation of the annual operating budget and financial plans, and establishing and maintaining budgeted supply and labor costs. The role requires conducting industry research to project future trends, ensuring the security of all Food & Beverage supplies, equipment, and inventory, and maintaining regular communication with all departments. The Assistant Director will also communicate with Food & Beverage Managers during service to ensure proper client and guest service, conduct frequent inspections of all dining, kitchen, and storage areas, and report unsafe conditions immediately. Ensuring equipment is properly maintained and functioning, and used only as intended, is also a key responsibility. The position may involve participating in the property’s Manager on Duty and Lobby Ambassador program, ensuring timely and courteous follow-through on requests, and selecting, supervising, training, developing, scheduling, disciplining, and counseling staff. Demonstrating positive leadership characteristics that empower and inspire employees, providing timely formal assessments, and performing in the capacity of any supervised position as needed are also part of the role. Conducting training on job and Marriott standards is also required.
