About The Position

The current vacancy is in the Shasta County Sheriff’s Office. This position involves cooking and related kitchen duties at the Shasta County Jail facility. The Adult Custody Cook I, an entry-level role, performs cooking and kitchen duties under close supervision, orders supplies, and keeps records. The Adult Custody Cook II, a journey-level role, assists sworn personnel with non-hazardous security responsibilities, performs cooking and kitchen duties, and directly supervises and trains adult inmates assigned to the Jail kitchen/laundry areas. Advancement to Adult Custody Cook II is typical after one year of experience as a Cook I.

Requirements

  • Graduation from high school or GED equivalent.
  • One (1) year of cooking experience.
  • One (1) year of experience comparable to that of Adult Custody Cook I with Shasta County (for Cook II).
  • One (1) year of full-time experience in preparing and cooking food and baking in an institutional or commercial kitchen (for Cook II).
  • Knowledge of cooking, baking utensils and equipment.
  • Knowledge of methods used in preparing large quantities of food.
  • Knowledge of special diet preparation.
  • Knowledge of safety and sanitation principles applicable to the preparation and serving of food.
  • Knowledge of methods of portion control.
  • Knowledge of safety procedures and precautions related to the operation of laundry equipment.
  • Knowledge of proper use and preparation of soaps, bleaches, starches, scouring, brightening, and other washing solutions used in the laundry.
  • Ability to read and prepare standard and special diet menus.
  • Ability to arrange food preparation sequence in order to serve meals on schedule.
  • Ability to properly and safely operate and clean a variety of food preparation equipment and appliances.
  • Ability to plan and schedule work to make efficient use of all laundry equipment and to meet work schedules.
  • Ability to adjust standard recipes according to varying number of servings.
  • Ability to use methods and procedures required in the preparation of large quantities of food.
  • Ability to follow security procedures.
  • Ability to maintain accurate inventory and records.
  • Successful completion of evasive self-defense training.
  • Successful completion of Fire and Life Safety Training.
  • Successful completion of Community CPR, first aid and classroom instruction.
  • Successful completion of OC spray and use training.
  • Complete Fire and Life Safety Training Course every two (2) years.
  • Carry and operate a Scott Air pack.
  • Complete First Aid/CPR training every two (2) years.

Nice To Haves

  • Experience preparing, baking, and cooking food in an institutional or commercial kitchen is highly desirable (for Cook I).
  • One (1) year working in an institutional or commercial laundry may be required for some assignments (for Cook II).

Responsibilities

  • Performs cooking and related kitchen duties at the Shasta County Jail facility.
  • Orders supplies and keeps records.
  • Performs non-hazardous security functions within the facility.
  • Prepares, cooks, and dispenses soups, meats, dairy, poultry, fish, and vegetables according to standardized menus and special diets.
  • Bakes bread and pastries.
  • Plans the processing of laundry, including receiving, marking, and sorting laundry articles.
  • Enforces safety and sanitation practices.
  • Inventories and requisitions supplies.
  • Maintains a record of all laundry items and supplies.
  • Writes incident reports as necessary.
  • Trains and supervises adult inmate workers in food preparation and the operation of a commercial laundry (Cook II).
  • Supervises the cleaning of the kitchen and equipment (Cook II).
  • Establishes work schedules (Cook II).
