As Toro Restaurant Sushi Cook, you will set the stage for an amazing dining experience within the Sushi Bar. Basic knowledge of Asian Cuisine, including, but not limited to Japanese, Thai, Chinese, Mandarin, and Korean. Knowledge of Wok Cookery and Sushi production. Assist in creating new Asian Cuisine items for specials/new menus. Maintain complete knowledge of and comply with all departmental policies/service procedures/standards. Maintain complete knowledge of correct maintenance and uses of equipment. Use equipment as intended. Monitor and maintain cleanliness, sanitation and organization of assigned work areas. Maintain and strictly abide by state sanitation/Health regulations and Resort requirements. Set up workstation with required mise en place, tools, equipment and supplies. Return all food items to the proper storage areas. Wrap, cover, label and date all items being put away. Clean up and wipe down food prep areas, reach-ins/walk-ins, and shelves. Prepare all menu items following recipes and yield guides. Inform supervisor of any shortages that need to be replenished for the day’s tasks. Communicate any assistance needed during busy periods to the Jr. Sous, Sous Chef, or Chef de Cuisine- Production to ensure optimum service to the guest. Attend designated meetings. Perform duties in other areas of the kitchen or other resort kitchens as assigned. Follow maintenance program and cleaning schedule. Other duties as assigned.
