About The Position

A DineAmic Sushi Chef is responsible for preparing high-quality sushi and Japanese-inspired dishes while delivering exceptional culinary standards and guest experiences. This role involves expert knife skills, precise fish handling, maintaining food safety standards, and contributing to a clean, organized, and efficient kitchen environment.

Requirements

  • 2+ years of experience as a Sushi Chef or Sushi Cook in a high-volume restaurant
  • Certifications: Current SERV Safe or equivalent food safety certification (or ability to obtain within 30 days of hire)
  • Strong knife skills and knowledge of fish butchery and sushi rice preparation

  • Flexibility to work evenings, weekends, and holidays as business needs require
  • Must be able to move safely through kitchen areas, including slick floors and tight spaces

Responsibilities

  • Prepare sushi rolls, sashimi, nigiri, and other Japanese dishes according to recipes and presentation standards
  • Ensure proper handling, storage, and rotation of raw fish and ingredients in compliance with food safety regulations
  • Maintain consistency in taste, portioning, and plating
  • Inspect the quality and freshness of fish and other ingredients daily
  • Maintain a clean, sanitized, and organized sushi station
  • Collaborate with kitchen team members to ensure timely and accurate service
  • Assist with prep work including cutting fish, preparing rice, slicing vegetables, and making sauces
  • Monitor inventory levels and communicate product needs to management
  • Follow all health, safety, and sanitation guidelines
  • Provide an engaging and professional guest experience when interacting at sushi bar (if applicable)
  • Additional duties as needed within the scope of the role
