About The Position

The Senior Cook directs the cooks and culinary workers on assigned shifts and is responsible for the preparation of all center meals within established budget allowances and pre-planned menus, ensuring compliance with government and management directives. This role is based at the Inland Empire Job Corps Center in San Bernardino, CA, which is operated by Management & Training Corporation (MTC). MTC is dedicated to providing quality services to local youth and values professional and caring employees who are committed to improving people's lives.

Requirements

  • Food preparation training
  • Two years related experience
  • Obtain ServSafe certification within 90 days of employment
  • Experience with youth
  • Excellent written and verbal communications skills
  • Computer proficiency

Responsibilities

  • Directs the cooks and culinary workers on assigned shifts.
  • Responsible for preparation of all center meals within established budget allowances in accordance with pre-planned menus in compliance with government and management directives.
  • Establish quantity of food to be prepared according to the menu and the number of students; coordinate amounts with cooks and culinary workers.
  • Instruct and supervise cooks and culinary workers in the safe, hygienic method of preparing appetizing, eye-appealing meals.
  • Ensure minimum waste through efficient storage, inventory and food utilization.
  • Assist in preparation of daily schedule; assign specific duties to staff and monitor and report work performance.
  • Coordinate the activities of the cooks and culinary workers in the preparation, efficient and timely arrangement, serving and cleanup of meals; and take charge of all food service functions on assigned shift in the absence of the manager, food services.
  • Responsible for storeroom inventory and for requisitioning merchandise from the property department.
  • Direct and assist in preparing food for special center functions, visitors and off-center assignments.
  • Maintain kitchen equipment in orderly, workable condition; ensure work area is safe, clean and sanitary at all times.
  • Support CDSS by implementing and participating in activities and programs as descried in the center’s CDSS plan or as assigned.
  • Maintain a safe and clean work area that models high standards for a work environment.
  • Provide positive, quality customer services to students, staff and other center customers.
  • Participate in student employability programs and activities.
  • Support, promote, and enforce the Job Corps’ Zero Tolerance Policy.
  • Promote the development of Career Success Standards by modeling appropriate behaviors, mentoring students where necessary and monitoring both positive and negative behaviors through interventions.
  • Maintain accountability of students and property; adhere to safety practices.
  • Cultivate and maintain a climate on center which is free of harassment, intimidation and disrespect to provide a safe place for staff and students to work and learn.
  • Perform other duties as assigned within his/her capabilities as determined by management.
