About The Position

To produce food according to the Vista specifications in a timely fashion. To keep the Vista kitchen in a safe and organized condition.

Requirements

  • High School Diploma / GED; Recognized Equivalent of a High School Diploma (RED) or Foreign High School Diploma (FHD).
  • Two (2) years Broiler cooking in a high-end steakhouse.
  • Strong knowledge of meat and seafood cuts.
  • Proven working knowledge of kitchen design and the operation of grills, roast-and-hold ovens, conventional and convection ovens, fryers, etc.
  • You must obtain and maintain a Gaming License from the Snoqualmie Gaming Commission.
  • Pre-employment drug testing is required for all positions.
  • The use of marijuana will not disqualify an applicant for positions in any department other than Transportation (Valet, Driver I).
  • DOT panel testing is required for the Driver position.

Responsibilities

  • Broiler Production & Temperature Accuracy: Fabricate, season, and cook all broiled proteins to order, ensuring ticketed temperature requests, quality standards, and proper presentation are consistently met.
  • Daily Station Prep & Setup: Prepare and complete all tasks on the daily station line prep list, including gathering supplies, setting up the broiler station, and ensuring all mise en place is ready prior to service.
  • Par Levels & Product Availability: Monitor on-hand product, maintain appropriate par levels throughout the shift, and communicate low inventory to leadership to support uninterrupted service.
  • Line Communication & Ticket Time Execution: Communicate proactively with Expo and other line stations to coordinate pick-up times, manage pacing, and ensure table ticket times and course timing are met.
  • Station Organization & Workflow: Keep the broiler station organized, stocked, and service-ready during peak periods; label items and maintain an efficient workspace to support speed and accuracy.
  • Cleanliness & Equipment Care: Maintain proper cleanliness of the broiler, station surfaces, tools, and surrounding areas; perform ongoing wipe-downs and end-of-shift breakdown/cleaning per standards.
  • Food Safety, Sanitation & Rotation: Follow all sanitation, HACCP/food safety practices, and proper food rotation procedures (FIFO), including correct cooling/heating, labeling, dating, and storage.
  • Additional Support Duties: Perform other duties and responsibilities as assigned, including assisting other stations, completing side work, and supporting overall kitchen operations as needed.
