About The Position

The Prep & Catering Lead plays a crucial role in shaping the culinary experience at 88 Tactical — both in our Founders Club restaurant and throughout our high-impact event operations. This position is responsible for overseeing weekly prep operations, executing high-quality catering services, and ensuring that every event dish reflects our premium brand standards. In addition to leading prep and catering production, this role supports line operations during peak business hours and lower event volume periods.

Requirements

  • 2+ years of culinary or catering experience required
  • Strong work ethics and ability to own outcomes from prep to final presentation.

Responsibilities

  • Execute and lead daily/weekly prep processes (3–4 times per week) including portioning, recipe adherence, proper labeling and storage.
  • Maintain accurate prep sheets, batch tracking, and inventory counts.
  • Ensure food quality, consistency, and compliance with safety standards at all times.
  • Serve as the primary culinary lead for all in-house catered and off-site events (corporate, social, VIP, etc.)
  • Oversee menu execution including hot and cold foods, baking, charcuterie layouts, buffet setups, and plated dinner service.
  • Manage back-of-house event timelines, staffing support, logistics , and culinary presentation.
  • Coordinate with Event Management to ensure seamless guest experience.
  • Assist on the cook line during peak service hours or low event demand.
  • Maintain cleanliness and organization across all culinary workspaces.
  • Assist with forecasting food cost needs based on upcoming events and restaurant traffic.
  • Create prep projections based on sales, menus, and event schedules.
  • Help keep waste minimal while maximizing product efficiency.
