Located in West Town, Pastry Chef Aya Fukai has opened her own bakery, Aya Pastry, which utilizes her extensive pastry experience to showcase artisan breads and whimsical cakes and pastries. The mission at Aya Pastry is to support Chicago chefs and business owners by providing an extensive bread and pastry program whose quality is unmatched by other bakeries. During her tenure at Maple & Ash, Aya was nominated in 2017 for James Beard Outstanding Pastry Chef and won Eater’s National Pastry Chef of the Year in 2016. In Chicago, Aya as the Executive Pastry Chef, cultivated the bread and pastry program for the two-Michelin starred restaurants, Sixteen at Trump and Ria at the former Elysian hotel.
