About The Position

Bacco Restaurant & Bar at Four Seasons Hotel and Private Residences Nashville is our signature Italian dining destination, celebrated for authentic cuisine, refined service, and memorable guest experiences. The Pasta Cook specializes in the preparation of fresh pasta and Italian dishes, ensuring each plate meets Bacco’s high culinary standards. This role contributes directly to the consistent delivery of high-quality, authentic Italian cuisine and supports the smooth operation of the kitchen.

Requirements

  • High School Diploma, culinary school, or equivalent professional culinary experience.
  • Minimum of five years of culinary experience, with specialization in Italian cuisine or pasta preparation preferred.
  • Strong proficiency in pasta preparation, cooking techniques, and kitchen equipment operation.
  • Excellent knife skills and ability to multi-task in a fast-paced, high-volume kitchen.
  • Knowledge of food safety, sanitation, and proper storage practices.
  • Professional demeanor, attention to detail, and ability to work effectively as part of a culinary team.
  • Authorization to work in the United States is required for this role.

Responsibilities

  • Prepare a variety of fresh pastas, sauces, and Italian dishes according to recipes, production standards, and guest orders.
  • Complete mise en place and set up the pasta station for lunch and dinner services.
  • Operate, maintain, and properly clean pasta-making equipment, stoves, ovens, and other kitchen tools.
  • Monitor ingredient quality, portion control, and presentation standards for all pasta dishes.
  • Assist in preparing accompaniments, sauces, and garnishes for pasta dishes in advance.
  • Ensure proper storage, labeling, and rotation of all perishables according to food safety standards.
  • Collaborate with the culinary team to maintain timing, flow, and quality across all kitchen stations.
  • Control food waste, loss, and usage according to kitchen policies.
  • Comply fully with Four Seasons Category One and Category Two Work Rules and Standards of Conduct as outlined in EmPact.
  • Work professionally and collaboratively with co-workers and supervisors to maintain a safe and organized kitchen environment.
