About The Position

The Noodle Bar Cook is responsible for preparing recipes, hot & cold food items and assisting in all kitchen activities to ensure that guests receive high quality food items in a timely manner. All duties are to be performed within the guidelines of the Mount Airy Casino Resort’s policies and procedures, Internal Control Standards and objectives.

Requirements

  • High school diploma or equivalent.
  • One (1) to three (3) years Asian Culinary experience required.
  • This job requires ability to perform the following: Carrying or lifting items weighing up to 50 pounds Moving about the kitchen Handling objects, products and utensils Bending, stooping, kneeling
  • Must be able to maintain a clean work environment and follow all health code standards.
  • Must be able to pass Cook 2 Competency Test with a minimum of 80%
  • Knife Skills
  • Basic Sauce and Stock Preparation
  • Cooking Techniques (e.g. poach, broil, sauté, fryer, roast)
  • Knowledge proper utilization of kitchen equipment pertaining to assigned work area.
  • Safe Food Handling
  • Communication skills are utilized a significant amount of time when interacting with the other cooks, wait staff or supervisors.
  • Reading and writing abilities are utilized often when preparing meals from a recipe or when monitoring inventory and par levels.
  • Mathematical skills, including basic math, percentages, quantities, and variances are used frequently.
  • Nights, weekends, and/or holidays are a requirement of this position.

Nice To Haves

  • Ability to speak Mandarin and/or Cantonese strongly preferred.
  • Degree or certificate in culinary arts preferred.

Responsibilities

  • Knowledge of Chinese Cuisine and preparation.
  • Knowledgeable of all recipes, presentations & criteria of service for their assigned station.
  • Must possess the ability to work various stations assigned by the chef or Sous chef within their designated outlet.
  • Must be able to identify and correct food preparation and presentation that is not in accordance with standards set by Executive Chef and outlet Chef.
  • Executes the methods of preparation, portion sizes, and timeliness of food preparation; control food usage to minimize waste. Must be able to follow and execute standardized recipes as instructed.
  • Actively participates in maintaining kitchens and contributes to cleaning regularly and that all health and sanitation standards are maintained; notify the Sous Chef of any needed repairs.
  • Review the following day’s menus, actively ensures that pars levels are maintained per their assigned station; qualities of product both raw and prepared meet MACR standards; maintain product rotations and ensures storage procedures are followed. Assist with the regular inventory of food and kitchen supplies; advise Sous Chef when items are necessary to maintain adequate inventory levels, maintains and communicates changes in the par levels to the Sous Chef.
  • May be assigned by Sous Chef to check in food orders received during their shift. They are to check accuracy of the delivery against invoice and inspect the quality of the products received. Any discrepancies are to be brought to the attention of the Sous Chef.
  • Promote teamwork and quality service through daily communication and coordination with other employees and the Sous Chef.
  • Is responsible for their professional appearance and their adherence to MACR employee dress code.
  • As this is a lead position it is inherent and required that the individual be able to work with little or no supervision. At all times the Noodle Bar Cook will conduct him/herself in a professional manner.
