Job Summary: Responsible for daily preparation of food items from pantry to fry to broiler to grills and all other areas of the kitchen. Ensures food goes out quickly, efficiently and of top quality. Help the Kitchen Chef and Sous Chef oversee quality control. During service the lead line is setting the kitchen tempo and flow. Help with troubleshooting and answering questions when necessary. Applicants must be at least 18 years of age. Hourly: The base hourly pay range below represents the low and high end of the Palisades Tahoe Resort, LLC’s hourly pay range for this position. Actual pay will vary and may be above or below the range based on various factors including but not limited to experience, education, training, location, merit system, quantity or quality of production, responsibilities, and regular and/or necessary travel. The range listed is just one component of Palisades Tahoe Resort, LLC’s total compensation package for employees. Requirements
- Required: Effective communication skills, oral & written
- Strong sense of customer service & safety awareness
- Able to understand and follow verbal and written instructions.
- Have a neat & clean appearance in compliance with the company grooming standards
- Punctual, able to report at scheduled start time
- Work well as part of a team.
- High School Diploma or GED
- Four years hotline cooking experience in a commercial kitchen
- Must have or be able to obtain a California Food Handlers card.
Nice To Haves
- Culinary school certification or degree
Responsibilities
- Order food supplies and equipment, inspect supplies, equipment, and work areas to ensure conformance to established standards.
- Instruct cooks and other workers in the preparation, cooking, garnishing, and presentation of food.
- Assist with creating menus, dishes and serving amounts plus supervising the preparation, flavoring and cooking processes.
- Supervises activities of grill and prep area, assures other cooks are knowledgeable about processes and procedures.
- Determines daily line priorities.
- Monitor sanitation practices to ensure that employees follow standards and regulations.
- Wash, clean, chop, dice, grate, slice a variety of meat, poultry vegetables and other food items and place in proper containers
- Understand and comply consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures
- Has understanding and knowledge of how to properly use and maintain all equipment in the station.
- Maintain a clean and sanitary work station including tables, shelves, walls, grills, fryers sauté burners and refrigeration equipment
- Refer to Daily Prep List at the start of each shift for assigned duties
- Inform Kitchen Manager of product shortages, equipment of food quality problems.
- Attend all safety meetings
- Assist kitchen and bus staff as needed.
