About The Position

The Cypress of Hilton Head’s Food & Beverage Department is recruiting for a hospitality focused Food & Beverage Director to join our team! POSITION SUMMARY: Works in accordance with established policies or direction/collaboration with the Executive Director to plan, organize, coordinate, and direct the operations of the Food and Beverage Department. Assures compliance with all applicable local, state, and Federal laws pertaining to the food service area. This person is a key member of the community’s management team adhering to policies and procedures and upholding the community’s mission, philosophy, values and our vision, principles and Hospitality Promises.

Requirements

  • Bachelor’s degree in a related area preferred; minimum of two years of study at the college level or culinary school required.
  • A minimum of 4 years of progressive supervisory experience in a food service environment required; excellent organizational and communication skills required; knowledge of applicable health and nursing home regulations ideal.
  • Must have the ability to implement a quality food program consistent with applicable regulations, as well as meet member and management standards.
  • Must have the ability to make technical and managerial decisions independently without consultation, at be able to interact with members, visitors, and all levels of staff in a courteous and professional manner.

Nice To Haves

  • Certified Dietary Manager preferred.

Responsibilities

  • Ensure that all members, residents, and employees receive nutritionally prepared, wholesome meals.
  • Oversee the hiring and disciplining of employees in the department ensuring adherence to facility policies and procedures.
  • Respond to complaints as documented on Member Comment Cards, verbal comments, or Food and Beverage Committee issues in an appropriate and timely fashion.
  • Ensure the Food & Beverage team follow all DHEC procedures; cleanliness & sanitation, shelf-life adherence, temperature controls for food (proper cooling and re-heating) and equipment. Prepare or direct the preparation of all food served, following standard recipes and special diet orders, per the Prep Lists completed for the licensed areas, so that excellence, quality, temperature and appearance of food is preserved. Ensure cleaning and closing checklist are completed after each shift.
  • Assist in choosing responsibilities of all cooks and dishwashers, ensuring all job functions have been taken care of properly.
  • Inspect Kitchen daily during all meal periods to ensure standards of production and sanitation are being met.
  • Develop and implement policies and procedures as needed.
  • Inspect Dining Room and Health Center daily for service and appearance standards.
  • Plan, organize, and direct all functions relative to the Food and Beverage Department.
  • Schedule and coordinate major cleaning and sanitation projects as needed.
  • Monitor updated food and miscellaneous costs as a measure to control expenditures related to budgeted expenses and ensure operation within the budgeted parameters.
  • Monitor Food and Beverage staffing and work assignments and authorize schedule changes as needed.
  • Determine and ensure the minimum standards of inventory supplies needed for food, beverage, and supply items are available as needed.
  • Monitor quality assurance issues for the department.
  • Ensure compliance with all applicable Federal, State and Local guidelines governing the facility.
  • Distribute employee evaluations appropriately and ensure timely completion and processing.
  • Attend purveyor major food shows yearly for new product marketing and awareness.
  • Conduct in-service training representing the Food Service Department as needed with safety as a direct goal.
  • Comply with The Cypress’ Code of Conduct in all aspects of job including participation in training.
  • Understand the responsibility to report suspected violations of The Cypress Club Code of Conduct to appropriate persons, or to The Cypress Club Compliance Hotline, or by completing a Written Report of Suspected Compliance Violation, or by contacting the Corporate Compliance Officer directly.
  • Instruct and document training of staff in policy and procedures pertinent to their individual roles.
  • Take appropriate precautions to avoid job related injuries and comply with injury reporting guidelines.
  • Actively participate in safety programs and comply with The Cypress Club policies and procedures.
  • Look for ways to continuously improve safety for members, staff and visitors.
  • Look for ways to offer more healthy items on the menu and list nutritional facts.
