Job Description • Rotates inventory including breads, condiments, consumables, and perishables. • Performs a quality control check to ensure food items meet the standard set for taste and temperature. • Readies the food items for server pick up by verifying the ticket with server's name and ensuring that the order matches exactly with the ticket instructions. • Ensures that each order’s plating and presentation meets the standards set for the specific food item. • Keeps Chef informed of any issues that might affect quality or timing of service • Ensures food is prepared and delivered in a timely manner. • Returns the lids and trays to the kitchen. • Assists with pre-bussing soiled dishware, utensils, and glassware prior to delivery of each course. • Stocks/restocks items on the line according to specifications. • Maintains in-depth knowledge of menus and drinks, including ingredients, common allergies, and food/drink terminology. • Effectively describes each course including the flavor and ingredients. • Effectively communicates and works closely with culinary and FOH teams. Acting as the liaison between the server and the kitchen. • Explains special orders to the cooks and tells servers when the kitchen is out of a particular menu item. • Assists with the retrieval of amuse bouche, intermezzos and other special request items as needed. • Knows the table plan, including seat numbers, table numbers, and sections to ensure that the correct food items are delivered to the guest. • Resolves problems beyond expectations without consulting a supervisor or escalates as needed. • Maintains knowledge and promotes current promotions and events, advertising one or more features of the property. • Follows and complies with applicable governmental laws and regulations, company and departmental policies and standard operating procedures. • Practices safe work habits at all times to avoid injury to self and others, including the safe operation of all relevant equipment and machinery. • Ensures all health regulations are maintained to prevent food-borne illnesses. • Ensures a clean, safe, and hazard-free work environment is maintained. • Adheres to all company and department policies, procedures, and standard operating guidelines. • Performs other duties as assigned. • Does not provide supervision to other team members. • High school diploma, vocational training or the equivalent is required. • Food Handler’s Certificate required. • RASS or TIPS Certification of alcohol awareness program must be obtained and maintain current certification. • Training in food, wine, and liquor service preferred. • California Responsible Beverage Service Training and Certification required upon hire. • Must be 21 years of age or older. • 2 or more years of experience working as a server, expeditor, busser, chef or cook in a fine dining environment. • Must have experience in fine dining service techniques. • Bilingual in Spanish preferred. • Ability to identify different cuts of beef, poultry, pork, and seafood. • Ability to work in a professional high-pressure environment while demonstrating and maintaining good personal relation/people skills and a positive attitude. • Ability to multitask and work well under stress. • Must be a self-starter and able to adjust to change. • Must be able to work flexible hours during the day or evening including weekends, holidays, and all blackout dates. 85% of our Management Team have been promoted from within On our most recent Engagement Survey, 82% of our Team Members expressed that they were grateful to work at Viejas 40% of our Team Members have worked for us for more than 5 years and 23% for more than 10 years San Diego's Premier Gaming Resort, Viejas Casino & Resort is a AAA Four Diamond Award recipient since 2013.
