About The Position

The Director of Restaurants will support the Property Executive Director of Operations and the VP Food & Beverage in providing direction and leadership for their assigned Restaurant Venues and teams consistent with the MGM brand. They are responsible for leading the restaurant management teams in achieving the operational and financial goals of their assigned venues, monitoring the performance, scheduling and training of the staff, maintaining the facilities in accordance with MGM Resorts service standards, and ensuring high customer satisfaction and an exceptional dining experience. All duties are performed in accordance with company policies and procedures.

Requirements

  • bachelor’s degree preferred
  • 4+ years of prior relevant experience, including experience in a similar resort setting
  • thorough knowledge of all aspects of food and beverage, including concept planning, production, presentation, service, and controls
  • ability to develop and maintain effective operational processes to achieve maximum efficiency while ensuring adherence to established guest service standards across multiple restaurant concepts
  • skilled at actively influencing and driving collaboration with individuals or groups at various levels within and outside the organization
  • provide strong leadership and direction, contributing to the success of each restaurant by engaging, developing, and mentoring individuals and teams

Responsibilities

  • Oversee assigned venue restaurant leadership, including establishment and achievement of profit objectives and desired standards of quality food, service, cleanliness, merchandising and promotion
  • Oversee the implementation and execution of policies, operating procedures and training programs, directives, menus, work schedules, rules and regulations for the restaurant staff
  • Interview, select, train, supervise, counsel and coach restaurant management staff for the efficient operation of the outlet.
  • Drive employee engagement through coaching, training, and development
  • Regularly review and evaluate the degree of customer satisfaction of their assigned outlets, to recommend and provide feedback on new operating and marketing policies whenever a change in demand, customer dissatisfaction, or a change in competitive environment requires such change
  • Utilize resources provided by COE’s to manage sales, drive profits, manage labor, and control expenses
  • Regularly review and monitor the degree of performance of all assigned outlet by using the tools provided by MGM resorts such as but not limited to Sevenrooms, Power BI, Tripleseat, Workday and report back to their direct leader to establish operating strategies in order to align with company expectations
