What you will have an opportunity to do: The Bradley Hotel, Fort Wayne’s premier boutique lifestyle hotel, is seeking a dynamic and experienced Director of Bars & Restaurants to lead our vibrant food and beverage outlets. This role is responsible for driving exceptional guest experiences while delivering strong financial performance across the hotel’s restaurant and bar operations. The ideal candidate is a hands-on hospitality leader with a passion for service excellence, innovative concepts, and team development. This position plays a critical role in shaping the guest experience while positioning The Bradley as one of Fort Wayne’s top dining and social destinations. Position Summary The Director of Restaurants & Bars oversees the daily operations, strategic direction, and financial performance of the hotel’s restaurant and bar venues. This leader is responsible for creating memorable guest experiences, maintaining service excellence, managing costs, and developing high-performing teams. Working closely with culinary leadership and the hotel’s Executive Committee, the Director will implement operational strategies, drive revenue growth, and ensure all outlets reflect the unique brand and culture of The Bradley.

Requirements

  • Bachelor’s degree in Hospitality Management, Business Administration, or related field, or equivalent experience.
  • 5–7 years of progressive Food & Beverage leadership experience, with at least 3 years managing restaurant or bar operations in a hotel or upscale dining environment.
  • Proven ability to drive revenue growth and operational profitability.
  • Strong leadership skills with the ability to develop and inspire teams.
  • Excellent guest service mindset and attention to detail.
  • Strong communication and interpersonal skills.
  • Experience with POS systems, restaurant management tools, and Microsoft Office.

  • Experience in lifestyle, boutique, or high-volume restaurant operations preferred.
  • Entrepreneurial mindset with the ability to create and execute innovative dining concepts.

Responsibilities

  • Lead the day-to-day operations of the hotel’s restaurants and bar venues, ensuring exceptional guest service and operational excellence.
  • Provide leadership, coaching, and development to restaurant managers, bar managers, and service teams.
  • Develop and execute strategies to increase revenue, profitability, and guest satisfaction across all outlets.
  • Partner with culinary leadership on menu development, promotions, and seasonal programming designed to attract both hotel guests and local patrons.
  • Manage labor scheduling and staffing to maintain service standards while controlling costs.
  • Implement and monitor food, beverage, and labor cost controls to achieve financial targets.
  • Analyze outlet performance, guest feedback, and market trends to identify opportunities for improvement and growth.
  • Ensure compliance with health, safety, sanitation, and alcohol service regulations.
  • Collaborate with Sales, Marketing, and Events teams to promote the hotel’s dining venues and support group and local business.
  • Foster a culture of accountability, teamwork, and continuous improvement within the department.
