About The Position

The Director of Catering and Conference Services leads high-volume, multi-event conference dining operations across multiple floors at Morgan Stanley’s flagship property. This role requires exceptional delegatory capacity, the ability to manage simultaneous large-scale events, and deep expertise in banquet and conference service. This leader is responsible for building and leading a strong captain program, enabling scale without sacrificing control or quality.

Requirements

5+ years in the industry, including 2+ years in management—preferably in luxury catering, banquets, or high-volume service environments.
Proven ability to execute complex, multi-floor events with precision and consistency.
Experience in menu costing, contract pricing, and labor cost management.
A track record of building solution-oriented teams and thriving in dynamic, fast-paced settings.
Ability to supervise every stage of service with a focus on operational excellence and an elevated guest experience.

Responsibilities

Lead high-volume conference catering and dining operations across multiple floors
Manage multiple concurrent events with precision and calm authority
Build, train, and lead a robust service captain program
Delegate effectively to ensure consistent execution at scale
Establish systems that support volume, speed, and quality
Partner with Culinary, Facilities, and Conference Services teams
Oversee staffing models, labor efficiency, and scheduling
Monitor execution quality, guest feedback, and KPIs
Ensure compliance with safety, sanitation, and service standards
Drive continuous improvement in high-volume banquet execution
