About The Position

This civilian supervisory position is responsible for the close supervision of food quality and preparation, satisfying individual dietary requirements and maintaining effectiveness of the menus at the Frederick County Adult Detention Center. This employee provides general supervision to other food service employees as well as assigned inmate workers. Supervision is given to Cooks and inmate workers; supervision is received from the Food Services Manager. NOTE: The upper pay range reflects possible wage rates for internal County transfers and promotions, which are calculated per County policy. For external hires, offers are made at the base wage rate. Requirements

  • High school graduation or the equivalency
  • Minimum 21 years of age on the date of hire
  • Minimum 3 years of work experience working in an institution kitchen setting, such as nursing homes, hospitals, school food service or correctional setting
  • Minimum 1 year of work experience directing or supervising the work of others
  • Possession of a valid automobile operator's license
  • Ability to obtain and maintain certification by the Maryland Police and Correctional Training Academy within 1 year of employment/assignment
  • Possession of First Aid and CPR certifications or the ability to become certified within 60 days of employment
  • Ability to obtain and maintain county driving privileges
  • Ability to maintain and adhere to all applicable Sheriff's Office Rules of Conduct, Detention Center policies and procedures, and the Frederick County Government Personnel Rules and Regulations
  • Knowledge of federal and state regulations regarding food preparation
  • Ability to effectively administer and direct food service operations within strict compliance to Federal and State sanitary regulations as well as individual dietary requirements
  • Ability to use good judgment in deciding when to act independently and when to refer situations to higher authority
  • Ability to act decisively and effectively, with tact and sensitivity for all persons
  • Ability to react quickly, calmly, and effectively in emergency situations
  • Ability to effectively train, supervise and evaluate the work of others to include inmate workers
  • Ability to work within varied limitations such as dietary considerations and budgetary restraints
  • Ability to develop and maintain an effective working relationship with co-workers, corrections personnel, representatives of community agencies, the general public, and offenders (in person, writing, and telephone)
  • Demonstrate strong and effective written and oral communication skills with the ability to prepare clear and concise reports

Responsibilities

  • Assist in maintaining an adequate food inventory system
  • Implement and monitor food preparations and service procedures
  • Assist in preparing daily menus, allowing for individual diet restrictions
  • Prepare meals according to menus; ensure that meals are served within the established feeding schedule
  • Supervise employees to include inmate workers; assign appropriate work schedules to ensure adequate coverage; review and approve employee timesheets
  • Assist with efforts to maintain accredited status from the Occupational Safety and Health Administration (OSHA), Maryland Occupational Health and Safety Administration (MOSHA), Fire Marshall's Office, Maryland Commission on Correctional Standards (MCCS), National Commission on Correctional Health Care (NCCHC), Immigration and Customs Enforcement (I.C.E.), and Health Department standards as they relate to the Corrections Bureau
  • Provide training to inmate workers on all food service equipment, food handling, safety and sanitation, inventory control, food preparation, and recipe reading
  • Supervise daily activities such as Meals on Wheels, to include the operation of a box truck for meal delivery
  • Prepare religious diets when deemed necessary by facility Chaplain
  • Monitor sanitation and safety standards in accordance with federal, state and local guidelines
  • Administer CPR and First Aid to inmates and staff as needed
  • Perform other duties as assigned
