The Dietary Supervisor is responsible for providing leadership and direct services for the Skilled Nursing Center’s dining operations. The Dietary Supervisor is a working leader in day to day operations directly supervising and assisting the Skilled Nursing Center’s dietary services team, maintains guest/resident focus business decorum at all times, and oversees the dining room flow, tray delivery service flow, balances the serving responsibilities among the dietary staff. Responsible for handling all foods in accordance with sanitary procedures and standards and complies with all federal, state and local regulatory procedures regarding food service.

Requirements

• High School diploma required or GED required; Associates degree preferred
• One (1) year experience in skilled nursing dining and/or long term care, assisted living or hospital dining
• Supervisory/management experience preferred which may include supervising and responsibility of shift/daily operations
• Maintains current Food Services Sanitation certificate
• Ability to handle multiple priorities
• Possess written and verbal skills for effective communication
• Ability to read and follow instructions to meet the dietary needs of the guests/residents
• Competent in organizational, time management skills
• Demonstrates good judgment, problem solving and decision making skills
• Demonstration of proficiency in computer skills, Microsoft Office (Windows, Outlook, Excel) and Sunrise applications with the ability to learn new applications
• As applicable, all Sunrise team members who drive a Sunrise vehicle must review and sign the Driver job description and understand the key essential duties for safety and regulatory compliance

Responsibilities

• Provides supervision to Skilled Nursing Center dietary team.
• Ensures that menus and department policies conform with nutritional standards, government regulations and internal procedures.
• Responsible for assigning tasks to the dietary team.
• Assists with staffing and scheduling according to operational, budgetary guidelines and federal, state/provincial, local laws.
• Assists in daily review of timekeeping practices and payroll reports to ensure all hours worked are recorded and appropriately paid.
• Assigns table and tray service delivery responsibilities to the dietary team.
• Ensures proper portioning of foods, attractive plate presentation and service of required diets for meals, nourishments and snacks.
• Tastes, smells, and observes food to ensure conformance with recipes and appearance standards.
• Maintains visibility during meal periods supporting customer engagement activities, interacts with guests/residents during meal periods.
• Assists and ensures guests/residents requests are met.
• Supports dietary team in table and tray delivery service adequacy and timing, etiquette and thoroughness; provides hospitality food service training and coaching as appropriate.
• Supports and assists in creating a pleasant dining experience for guests/residents.
• Responsible for articulating the menu to dietary team, guests/residents.
• Assists guests/residents and responds to pertinent questions about menu items.
• Addresses, responds and resolves guest/resident and concerns.
• Inspects food and food preparation and storage areas.
• Maintains dining room with adequate supplies and inventory for the table top service and tray delivery service requests.
• Ensures standards of cleanliness, hygiene, proper attire and health standards are maintained at all times by dietary team.
• Monitors to ensure all assigned side work, cleaning and stocking is completed.
• Monitors to ensure floor charts and dining room is set up to Sunrise quality service standards.
• Ensures safe food handling is practiced at all times to prevent an outbreak of food borne illness.
• Supervises and completes daily, weekly and monthly cleaning assignments.
• Maintains all work areas in a healthful and safe condition.
• Supervises and supports dining room and surrounding areas for proper directional flow, organization and supplies placement.
• Partners with community team to ensure community is in compliance with national/provincial regulations pertaining to occupational health and safety requirements and promotion of Risk Management programs and policies; adherence to safety rules and regulations.
• Practices safety procedures at all times including Personal Protective Equipment (PPE), fire extinguishers, Safety Data Sheets (SDS) and Lockout Tagout procedures.
• Reviews, reads, notates and initializes the Daily Log and Department Log to document and learn about pertinent information and any resident’s dietary, physical and behavioral changes.
• Reviews ISP (Individualized Service Plans), ensures that the paper copy of resident diet orders from SCC is up to date to use in case of TSD downtime and emergencies.
• Participates in regular Resident Counsel Meetings and other identified food committee meetings.
• Maintains and protects the confidentiality of resident information at all times.
• Participates actively as a member of a team and committed to working toward team goals.
• Demonstrates in daily interactions with others, our Team Member Credo.
• Commits to serving our residents and guests through our Principles of Service.
• Contributes in the overall engagement programs and processes (customer and team member engagement) including participating in the team member engagement survey and engagement improvement planning workshops.
• Attends regular meetings; Town Hall, Department Team Meetings, Cross Over, and others as directed by the Supervisor / Department Coordinator.
• Maintains compliance in assigned required training and all training required by state/province or other regulating authorities as applicable to this role to ensure that Sunrise standards are always met.
• Performs other duties as assigned.
