In absence of DSD, directs, coordinates and supervises all Dietary Services in accordance with local, state and federal regulations and Facility policies and procedures. Prepares and/or monitors the daily work schedule for dietary services staff. Assures adequate personnel are on duty for each shift. Assumes any position in the department to assure coverage. Assures adequate food supplies by ordering, purchasing and stocking ample supplies per Facility policies and practices and within Department budgetary guidelines. Conducts physical inventories prior to placing orders and at year end. Checks in orders and puts up stock. Monitors dietary equipment to assure cleaning and /or maintenance. Assigns and monitors cleaning/sanitation of department. Coordinates special cleaning projects with DSD, other departments and outside vendors as necessary. Assures timely completion of Relias requirements for self and other dietary staff. Assists with orientation and training of dietary staff. Assists cooks with production; trains staff as necessary. Supervises tray line operations/dining room service. Discusses staff performance/disciplinary problems with DSD. Recommends and/or conducts specific areas of in-service or continuing education for the department as required. Visits residents upon admission and on a scheduled basis to discuss dietary needs, likes and dislikes and food preferences. Documents information obtained. Prints tray card and supplement labels as required for resident meal and snack periods. May be required to complete dietary assessment forms in absence of DSD. Other duties as assigned by DSD or Administrator.
