As a Culinary Specialist you’ll prepare high-quality meals for a variety of Concessions Concepts, contributing to memorable moments for fans and guests.

Requirements

  • Experience in food preparation or culinary arts, large-volume kitchen experience preferred.
  • Strong knowledge of culinary techniques, knife skills, and kitchen operations.
  • Ability to multitask and work effectively under pressure in a fast paced environment.
  • Knowledge of food safety regulations, sanitation practices, and HACCP guidelines.
  • Ability to follow instructions and work collaboratively in a team environment.
  • This position may require the following valid certifications, Maricopa County approved Food Handler certification.
  • Flexibility to work evenings, weekends, and holidays as required for stadium events.
  • Ability to stand and walk for prolonged periods, ranging 6-12 hours, during events or as required by operational demands.
  • Exposure to heat, steam, and cold temperatures within the kitchen environment.
  • Ability to lift, push, pull, and carry up to 50 lbs.
  • Manual dexterity and coordination to perform tasks such as chopping, cutting, and food preparation.
  • Ability to bend, stoop, kneel and ascending/descending stairs, as necessary.

Nice To Haves

  • 5 years’ experience in a Lead or Supervisory Culinary role preferred.

Responsibilities

  • Supervise and guide prep cooks and cooks, ensuring adherence to recipes, portion control, cooking standards according to specifications and Levy Core Signature standards.
  • Oversees multi-unit locations across Concessions department, ranging from 4-10 concept stands and a variety of menu items.
  • Enforce kitchen safety standards and food safety compliance, including proper food handling, cross-contamination prevention, and maintaining safe food temperatures.
  • Oversee the preparation of ingredients, ensuring quality standards, and compliance with safety protocols; check food temperature during preparation, cooking, and storage.
  • Comply with all health, safety, and sanitation regulations; follow established safety standards for food handling, preparation, cooking, and storage
  • Perform prep duties, such as chopping vegetables, marinating proteins, and preparing other ingredients according to recipes and production sheets.
  • Ensure all kitchen equipment and stations are properly cleaned and maintained, following safety procedures and sanitation guidelines. Supervise equipment usage and cleanliness within the kitchen.
  • Assist with inventory management, ensuring ingredients are stocked; complete production logs and monitor portion control and waste.
  • Ensures excellent guest experience; deescalate and resolve guest complaints promptly.
  • Fosters positive and collaborative working environment for staff; assists management with addressing employee concerns and performance issues.
  • Work collaboratively with Culinary and Concessions team to ensure timely service and efficient operations.
  • Provide break coverage and fill staffing gaps in various Concessions roles as needed.
  • Assists with all event types including catering, department specific products, game day events.
  • All other duties as assigned
