About The Position

Position Summary: The successful Culinary Intern is technically competent in food preparation and production, contributes to general galley operations and works in conjunction with the sous chef, participates in managing back-of-the-house cruise execution to ensure consistently high levels of quality, service and guest sanitation satisfaction while maintaining a high level of profitability. The right person will be adaptable, dynamic, and embody Hornblower’s RESPECT Service SystemDuties and Responsibilities: Provide exceptional hospitality to coworkers and guests following our RESPECT Service System (RSS)Participate in the development of strong teamwork within the staffPrepare high-quality food following prescribed recipes and production specificationsReceive and store food and supplies using proper food-handling techniques including stock rotation and monitoring temperatures of perishable productsAssist in routine cleaning of galley including daily cleaning of equipment and implements, sanitizing food preparation surfaces, and mopping floorsMaintain uniform and personal grooming in compliance with appearance standardsMaintain buffet areas in accordance with food training manualDevelop positive working relationships with city department heads and peersResolve guest service issues, in conjunction with the on-duty Restaurant Manager, utilizing strong guest service skills and exercising diplomacy in keeping with company objective of guest retentionEnsure that all staff consistently follows and adheres to all health department sanitation codes and requirements thereby maintaining the Company’s strict standards of sanitationAdditional job duties as assigned

Requirements

  • Applicants must be currently enrolled in a college or professional culinary program
  • Must be available to work 20 - 40 hours a week based on business needs & internship requirements
  • High school diploma or equivalent preferred
  • Energetic and enthusiastic personality essential
  • Will be closely supervised; must be able to take direction
  • Must be able to effectively understand and convey written and verbal information to coworkers and guests
  • Must possess a service orientation –actively looking for ways to help others
  • Will work for extended periods without sitting
  • The nature of the work may be strenuous, and the work environment may be warm
  • Required to lift and move heavy items such as cases of provisions and large containers of prepared foods
  • Will be required to be available for work on all major holidays
  • Must meet minimum state age requirements

Responsibilities
