About The Position

Reporting to the Correctional Associate Warden at a multi-custody female correctional facility, this position assists in managing a large-scale food operation by directing the preparation and serving of food to offenders. Other job duties of this position include, but are not limited to, the following: 1. Approving of submitted shift assignments, time reports, and leave requests for subordinate personnel on a daily basis. 2. Conducting employee disciplinary investigations and submitting recommendations to the facility head of appropriate disciplinary action and disposition. 3. Ensuring Food Service Managers/Supervisors maintain a satisfactory level of cleanliness in the Food Service Department in accordance to NC Department of Adult Correction's policy and procedures, facility standard operating procedures, and as directed by the state and county health department. 4. Maintaining proper records showing cost and amount of food used to stay within budget limits including maintaining an accurate inventory of food and supplies. 5. Training subordinate staff for the request/receipt of dry good products, meats, dairy, and other items needed in the preparation of meals and monitoring all requisitions of necessary foods and supplies by subordinate staff for meals in accordance with the master menu and following standardized recipes for appropriate amounts.

Requirements

  • High School or General Educational Development (GED) certificate AND six years of experience in institutional food preparation and food services, in management of a commercial food service operations, OR three years as a Correctional Food Service Supervisor; or an equivalent combination of education and experience.
  • Must be eligible for certification by the North Carolina Criminal Justice Education & Training Standards Commission.

Nice To Haves

  • Documented experience in sanitation, preparing menus, managing inventory, and/or other large-scale food service production activities.
  • Documented supervision of employees and/or offender workers.
