Develop a beverage program, that focuses on the types of drinks offered, brands of liquor used, recipe development, costing, pricing, photos, vendor support and menu placement. Scope to include non-alcohol, wine, beer, and cocktail items. Order all hotel beverage & bar related supplies including non-alcoholic beverages and maintain a sufficient inventory. Title: Chef & Beverage Manager Location: Saddlebrook, NJ FLSA: Exempt Status: Fulltime Reports to: AGM/GM Supervises: Culinary & Beverage Department Pay Range: 90-95K ESSENTIAL DUTIES AND RESPONSIBILITIES: Performs shift open and close duties in accordance with Restaurant Manager’s checklist. Properly executes revenue and check control procedures on shift in accordance with SOP’s for managing POS, and open and close procedures Utilizes all tools for running shift, (e.g., schedules, Open Table, Chow Now, floor plans, hotel reservations, all floor associate checklists). Leads floor shifts, conducts daily staff pre-shift meetings to communicate specials, hotel occupancy, guest satisfaction scores, reservations, or service concerns. Ensure all F&B outlets within the hotel maintain a neat and clean appearance Resolve staffing concerns such as call outs, last minute bookings, delayed ticket times or any other daily challenges that may arise. Responsible for knowing and adhering to company HR protocols for all employee discipline or compliance concerns. Supports restaurant manager to interview, train, and delivery on-going training to ensure brand standards are met and guest satisfaction goals exceed brand expectations. Monitor floor activity and assist with seating, serving and kitchen communication to ensure coverage in the restaurant, and all other F&B outlets. Achieve a high level of customer satisfaction and loyalty metrics on GSS & social media, handles guest requests in a prompt and appropriate manner Initiate guest interaction through social media outreach, table touches, circulation on the floor with the goal of driving sales & enhancing guest feedback. Develops and executes beverage related promotions that drive sales and improve guest experience within hotel F&B outlets. Supports Sales Team with beverage recommendations that enhance sales, improve profitability and boost guest satisfaction for all F&B outlets Develop and maintain par sheets, update monthly inventory values based on recent invoices, orders all alcohol and non-alcohol beverages & bar supplies to meet par. Execute beverage ordering in all outlets to meet or exceed budgeted figures, maintain beverage vendor accounts, and keep a master list of vendor contacts. Responsible for ensuring all beverage related orders are delivered accurately, properly stocked, and invoice prices are correct. Processes invoices following hotel accounting procedures. Review cost fluctuations with restaurant manager & F&B director highlighting opportunities within beverage sales. Apply strategies to improve performance. Initiate and implement marketing and up-selling techniques to promote restaurant food and beverage programs and to maximize overall bottom-line revenue. Ensure associates have up-to-date knowledge of F&B offerings, events & pricing. Train all bartenders and servers on beverage knowledge as needed to ensure a high level of beverage knowledge. Responsible for the scheduling or providing feedback on when to schedule beverage staff in all outlets of the hotel. Maintains a safe and sanitary work environment for all associates and guests. Initiates guest interaction through seeking and soliciting feedback from guests, implementing service recovery tools when necessary. Responsible for promoting beverage programs and increasing sales through outside promotion of the hotels F&B utilizing Social Media or other platforms. · Develop and maintain a curated selection of non-alcoholic and alcoholic beverage selections · Demonstrate a thorough knowledge of beverage recipes and mixing procedures, along with recipe costing & monthly mix analysis. · Ensure bar staff prepare drinks in accordance with recipes and the guest’s order · Maintain ongoing knowledge of beverages and wines and train staff on trends · Create and maintain details on all beverage menus and ensure POS programming is up-to-date and correct. · Adhere to all legal and/or company policies and standards following the laws and guidelines for beverage service
