The Beverage Manager leads and oversees all beverage operations across Dellshire Resort, including bars, lounges, pool outlets, restaurants, events, and specialty concepts. This position is responsible for creating exceptional guest experiences through innovative beverage programming, operational excellence, team leadership, and financial performance. The Beverage Manager ensures quality, consistency, and service standards while cultivating a welcoming, story-driven atmosphere that reflects Dellshire’s immersive and memorable brand.

Requirements

  • Bachelor’s degree in Hospitality, Business, or related field preferred.
  • Minimum 4–6 years of progressive Food & Beverage experience, including leadership of bar or beverage operations.
  • Strong knowledge of mixology, wine, beer, coffee, and current beverage trends.
  • Proven ability to manage budgets, inventory systems, and labor costs.
  • Excellent leadership, training, and team development skills.
  • Exceptional guest service and communication abilities.
  • Proficiency with POS systems and Microsoft Office applications.
  • ServSafe and alcohol service certifications required (or ability to obtain).

  • Multi-outlet or resort experience strongly preferred.

Responsibilities

  • Oversee daily beverage operations for all resort outlets including lobby bars, restaurants, pool bars, concessions, and special events.
  • Lead, coach, and develop bartenders, bar leads, and supervisors to deliver exceptional service and hospitality.
  • Establish service standards, procedures, and training programs to ensure consistency and efficiency.
  • Maintain strong floor presence during peak service periods to support teams and engage with guests.
  • Design and manage creative beverage menus including cocktails, mocktails, coffee, wine, beer, and seasonal offerings.
  • Partner with Culinary and Marketing teams to create themed menus, promotions, and signature experiences that enhance the Dellshire story.
  • Ensure proper presentation, portioning, and quality standards for all beverages.
  • Monitor guest satisfaction and implement service recovery and improvement initiatives.
  • Manage beverage budgets, cost controls, and profitability across all outlets.
  • Analyze P&L statements, labor costs, and product usage to identify opportunities for revenue growth and expense reduction.
  • Oversee ordering, receiving, inventory control, and vendor relationships.
  • Conduct regular audits to minimize waste, theft, and overpouring.
  • Implement pricing strategies to optimize margins while maintaining guest value.
  • Ensure compliance with all alcohol service laws, health department regulations, and safety standards.
  • Maintain proper licensing, certifications, and training for responsible alcohol service.
  • Enforce sanitation, cleanliness, and workplace safety practices across all beverage areas.
  • Partner with Banquets and Catering to execute beverage services for meetings, weddings, and special events.
  • Collaborate with Sales & Marketing on promotions, activations, and resort programming.
  • Support hiring, scheduling, and workforce planning to align with business demands.
