About The Position

Responsible for the overall day to day operations of the beverage department, including updating and maintaining all beverage outlets throughout the property. Ensures the cleanliness and sanitation of all work areas and equipment in accordance with Health Department standards.

Requirements

  • Previous F&B management experience preferred.
  • Must complete Beverage Manager assessments and achieve an 85% or better
  • High school diploma or its equivalent.
  • Must be 21 years of age or older.
  • Must pass all required pre-screening and background checks.
  • Internal candidates must meet the eligibility requirements as provided in the Transfer and Promotion policy.
  • Ability to work a variety of shifts, this includes day, swing, late-night, weekend, and holiday shifts as scheduled.
  • Must be able to obtain and maintain a valid Kentucky gaming/racing license.

Responsibilities

  • Responsible for supporting the Director of Food and Beverage in all aspects of beverage quality, cost control, and completing inventories.
  • Respond to all inquiries regarding the financial performance of the beverage department.
  • Monitor and ensure that beverage operating procedures are met on a consistent basis.
  • Communicate effectively with front and back of house management and staff.
  • Oversees the flow of beverage service on the gaming floor and at all property bars.
  • Provides day to day leadership direction to the Assistant Beverage Manager and Beverage Leads.
  • Demonstrate the ability to perform the duties of all bars and service wells.
  • Monitor and control labor within the department.
  • Maintain adequate coverage in beverage outlets based on business demands.
  • Responsible for hiring, training, evaluation, and corrective counseling of beverage team members.
  • Ensures all team members follow recipes, measurements, quantities, and other information so each beverage served can be duplicated consistently.
  • Ensure all prep items are made to approved standards.
  • Confirms that all opening and closing checklists are adhered to and product(s) stored and secured.
  • Inspects beverage serving areas to ensure observance of safe, sanitary handling practices.
  • Make certain all product(s) is placed and restocked in designated areas.
  • Maintain a solid knowledge of all beverage products and ensure all products are properly rotated.
  • Immediately research and resolve any malfunctions of equipment to ensure optimum operation and minimal down time.
  • Inspects all bars and service areas to ensure all products are properly labeled and dated to ensure safekeeping and sanitation.
  • Ensures all beverage team members are using all bar equipment, cleaning, and sanitizing products in accordance with all MSDS sheets and departmental standards.
  • Provide day to day leadership direction to the F&B hourly staff.
  • Maintain a solid knowledge of F&B products and ensure all products are properly rotated.
  • Demonstrates flexibility by working a variety of shifts to ensure presence and coverage as necessary based on business demands.
  • Immediately reports any concerns or opportunities to the Director of Food & Beverage.
  • To provide BIG Service to internal and external guests and ensure their complete satisfaction, inclusive of greeting and interacting with guests in a friendly and enthusiastic manner, anticipating and meeting guest needs and preferences, remaining calm and professional when dealing with guests that are difficult or upset.
