About The Position

As the Assistant Manager of F&B Pool Operations at Mandalay Bay, you will support the daily operations of one of Las Vegas’ most iconic resort pool experiences, where food, beverage, and hospitality come together in a vibrant, high-energy setting. In this role, you will help set the tone for an exceptional guest experience through your welcoming presence, attentive service, and hands-on leadership. By understanding each guest’s unique story and needs, you will truly own their experience—creating WOW memories they carry with them long after their visit—while supporting operational excellence, team engagement, and seamless service throughout the pool environment.

Requirements

• High School Diploma or GED required
• Work varied shifts, to include weekends and holidays required
• Must be 21 years of age or older
• 2+ Years of prior relevant service experience in a similar dining environment required

Nice To Haves

• Previous experience as a Manager in F&B operations or a similar environment preferred
• Experience managing employees using a Collective Bargaining Agreement preferred

Responsibilities

• Review daily schedules and manage time off and vacation requests; coach and train on policies, procedures, and performance
• Supervise cashiers to ensure correct policies and procedures for check handling and closing are maintained by service staff as well as manage activities; means of access and egress, to ensure complete compliance with Health Department and Fire Marshall Regulations
• Directly communicate with the Chef on all food service and menu issues
• Assist in seasonal menu changes and holiday menu changes
• Order supplies through the IP System and Purchasing
• Exercise cost controls for all aspects of restaurant operation
• Manage pricing and maintenance issues to ensure checks can be processed correctly
• Direct communication with guests for special requests and large party reservations
