Your leadership, creativity and culinary skills as a Pastry Cook will guide the preparation of our Pastry Kitchens wide assortment of delicious baked goods for the enjoyment of our guests. What you will be doing: Open the kitchen early in the morning for breakfast functions and outlets. Follow recipes and have knowledge working various scales. Shape dough to prepare different types of pastries, including croissants, cookies and sweet rolls. Familiarity with all professional kitchen equipment, including mixers, blenders and dough sheeters. Able to store and handle all baked goods. Assist with the set-up of banquet functions, outlet orders, and breakfast production. Monitor and maintain sanitation standards. Monitor and maintain safety standards Completes task as assigned by supervisor Knowledge of custards, cookies, mousse, sponges, meringues, and icings. Knowledge of mixing methods; creaming, whipping, folding. Knowledge of finishing methods and techniques. Basic celebration cake building and icing. Knowledge of various dough. Basic knife skills for chopping, cutting, dicing, etc. Understanding of basic Pastry Kitchen terminology
