About The Position

Butcher will cut, trim, and prepare all raw meats for smoking and will manage /execute all sausage production. This is a part time, non-exempt position. Requirements

  • Familiarity with USDA guidelines.
  • Ability to operate meat grinders and other meat-cutting equipment.
  • Excellent organizational skills and attention to detail.
  • Ability to trim, process and deliver all meats efficiently and accurately.
  • Minimum 18 years of age.
  • Have reliable transportation.
  • Be able to work in a standing position for long periods of time (up to 8 hours).
  • Must be able to lift 50 lbs.
  • Be able to communicate clearly and effectively.
  • Must be a team player and work in fast paced environment.
  • Have a valid Alcohol Server and Food Handlers Certification

Nice To Haves

  • Ability to speak Spanish a plus.
  • Previous experience working in a BBQ restaurant.
  • High School degree preferred but not required.

Responsibilities

  • Operates meat processing equipment.
  • Uses hand tools and power equipment to cut meat to specifications.
  • Tenderizes, brines, seasons and marinates meats.
  • Sausage production.
  • Coordinate with Chef and Pitmaster to ensure that all meats are prepared to specifications and delivered to the pit room at scheduled times.
  • Fully understand and comply with all federal, state, county and municipal regulations that pertain to health, safety.
  • Evaluates quality control and ensures the workspace is kept sanitary.
  • Ensures products comply with all U.S. Department of Agriculture’s (USDA) guidelines.
  • Receives and stores meat when it is delivered and ensures its quality and freshness.
  • Oversees meat inventory in conjunction with Pitmaster and places orders to maintain inventories.
  • Notify managers of any problems or issues that could affect the quality of meat products sold to customers.
  • Meets productivity, accuracy, and quality standards.
  • Performs other duties as assigned by management.
