Requirements

  • Must possess a good knowledge of common chemicals and proper handling of equipment.
  • 3-4 years in a hotel stewarding operation, at least 1 year hotel experience in a luxury property preferred.
  • Task oriented with the ability to take initiative
  • Strong attention to detail
  • Ability to manage and work in a team

Responsibilities

  • Ensure the neatness, cleanliness and order of all kitchens, back of house areas, storage areas, employee dining room, stewarding department machinery, compactor room, carts, and table through constant monitoring.
  • Assure proper sanitation and hygiene techniques as well as the movement of garbage throughout the hotel. Maintain controls against theft and waste.
  • Maintain the washware operation to ensure proper supply of clean Silver and Control breakage of all smallware, assist in setting up and carry out inventories first month of the year and quarterly thereafter.
  • Assist in maintaining all kitchen equipment and dish machines in proper working order; ensures and controls usage of cleaning supplies and maintain hand washing facilities in the kitchen.
  • Store, stock, inventory, collect, wash, and restock China, Silver, glass, and other equipment in designated areas of the hotel according to a pre-determined part stock.
  • Work closely with Chef, Director of F&B and Banquet Manager to coordinate banquet activities; including an adequate supply of smallware for banquet set-up, the preparation and distribution of coffee, hot water, condiments, etc.
  • Perform other task or projects as assigned by hotel management and attend all required training.
