About The Position

Proof of the Pudding is an award-winning catering company throughout the Southeast with a commitment to creating quality culinary concepts from scratch. This standard was upheld through the expansion into Sports and Entertainment Hospitality Services by providing elevated concessions and premium offerings to collegiate stadiums, PGA golf tournaments, International Boat Shows, Professional Sports Teams, & more. We are seeking a Sous Chef for Mississippi State University (MSU) located in Starkville, MS to assist and help lead the premium suites culinary team at Davis Wade Stadium (Football), Dudy Noble Field (Baseball), Humphrey Coliseum (Basketball), and other sporting/pop events throughout the year. This position will also assist the concessions culinary team as needed. Mississippi State University is a large campus in the heart of Mississippi where the Bulldogs reign supreme. Football games bring in 65,000 adoring fans while baseball games bring in 16,000 fans to cheer on their College World Series Champs.

Requirements

• 4+ years in a leadership/supervisory culinary role, experience in high volume catering or Stadium Food & Beverage preferred
• A degree/training in the culinary arts, hospitality management, or equivalent.
• Knowledge of Microsoft Office, internal and external email communications, and purchasing procedures
• Must live near or be willing to relocate to Starkville, MS
• Capable of producing a consistent product in high volume
• Excellent listening and communication skills

• Exhibit cooking skills, knowledge, and food handling skills consistent with contemporary training and have the desire to learn more

Responsibilities

• Help lead the execution of premium culinary operations including planning, ordering, menu creation, and food serviced execution of all game day and event menus. Football: [includes 80 suites, 5,000 of guests per game, plus 6 large clubs] Baseball: [includes 25 suites, 1,500 of guests per game, plus three large clubs] Basketball & other varying events
• Maintain a safe, secure, and healthy environment by establishing, following, and enforcing sanitation standards and procedures; complying with legal regulations; securing revenues; and maintaining security systems.
• Creating and maintaining the overall moral of the kitchen and culinary team
• Schedules Staff and food production in accordance with the demands of business, the direction of Executive Chef and Company policies
• Assist with hiring, onboarding, and training of new culinary staff
• Assists Executive Chef with logistical planning and execution of events as directed
• Assist with purchasing and inventory management for all culinary operations
• Develop, implement, and communicate creative menu items that adhere to the Proof of the Pudding standard of innovation and excellence
• Be a lead in the hiring, training, accountability, and scheduling of the culinary staff
• Lead and coach culinary department to develop a strong and growing team.
• Performs other related duties as needed.
