General: Responsible for maintaining compliance with all government, Levy Restaurants and Compass Group food safety, cleaning and sanitation requirements Provides leadership, training and oversight for all food handling personnel on property including all culinary, service and management Lead manager responsible for all sanitation oversight personnel Direct report to Executive Chef and Senior Executive Chef Works with the stewarding staff to ensure regular cleaning and sanitation of all foodservice hand tools and service ware Works with the stewarding staff to ensure regular cleaning and sanitation of all refrigeration and freezers Works with the stewarding staff to ensure regular cleaning and sanitation of all hot holding equipment Ensures the maintenance of high grades from county health inspections and internal company and third party audits (e.g., Everclean)

Requirements

  • At least 5 years of experience in BOH foodservice, preferably as a Chef or in a related culinary supervisory role
  • Strong leadership and management skills
  • Maintains a professional appearance and demeanor
  • Computer fluent
  • Comfortable and confident with public speaking to train employees
  • Maintains Serve-Safe manager level certification and functions as exam proctor for ServSafe certification tests for area Levy Restaurant managed properties.

Responsibilities

  • Performs regular physical audits and inspections of all foodservice and food handling areas of the property
  • Daily: High volume production areas such as main kitchens, preparation areas and warehouses
  • Weekly: Remote pantries and food staging areas
  • Ensures that all time & temperature logs are filled out
  • Ensures that all refrigerator and freezer logs are filled out
  • Maintains a systematic and well-ordered physical history of all required logs in compliance with government and company regulations, ready to present to management and inspectors as required
  • Observes and monitors staff to ensure proper food handling, sanitation, hand wash and glove use
  • Reports any observations or violations to the lead culinarian for that area or department, e.g., sous Chef or Senior Sous Chef
  • Works with warehouse, purchasing and receiving personnel to ensure that all products received are at the correct temperatures and have been handled according to company policies and government regulations. Communicates all related expectations and requirements to all vendors
  • Formulates training systems and schedules, provides regular training of all food handling and service personnel to ensure safe food handling, temperature control, and compliance via periodic classes and daily pre-shift topic based discussions
  • Interfaces with the chemical supply company to ensure that the correct sanitation products are purchased, in inventory and being used
  • Maintains Serve-Safe manager level certification and functions as exam proctor for ServSafe certification tests for area Levy Restaurant managed properties.
  • In the event of a suspected food borne illness report or outbreak, follows all required procedures including reporting, collection and handling of food samples, employee interviews etc., prepares all required paperwork and functions as point person and communicator with all relevant health department and other government agencies, as well as all relevant internal Levy Restaurants and Compass group personnel
  • Prepares and files regular inspection reports with the VP of Operations, Senior Executive Chef and Executive Chef
  • May perform other duties as assigned
