About The Position

25 Degrees, the Hollywood Roosevelt’s iconic burger-focused diner, is seeking an experienced Restaurant General Manager to lead daily operations and guide the team through its next phase of growth. Located inside one of Hollywood’s most historic hotels, 25 Degrees offers an elevated take on the classic American burger joint, known for gourmet burgers, a full bar program, and an atmosphere blending old‑school diner charm with Hollywood character.  Open from early morning through late evening, the restaurant serves breakfast, all‑day American favorites, handcrafted cocktails, and a diverse menu that includes traditional and modern dishes. The space features plush booths, bar seating, and a lively, casual setting that is consistently praised for its reliable food, memorable burgers, and relaxed vibe. This is a hands‑on leadership role focused on elevating service standards, strengthening team culture, and ensuring consistency across all meal periods. The General Manager will translate the brand vision into strong daily execution, support Food & Beverage and Culinary leadership, and maintain high levels of guest engagement in a fast‑paced, high‑volume environment. The ideal candidate will mentor the front‑of‑house team, create accountability, and foster a positive, professional culture aligned with The Hollywood Roosevelt’s service expectations.

Requirements

  • Minimum three years of restaurant management experience in a casual‑upscale, elevated dining, or high‑volume concept.
  • Strong leadership background with proven ability to coach, motivate, and manage teams.
  • Solid understanding of guest service excellence and high‑volume operations.
  • Experience with bar‑forward programs and late‑night service strongly preferred.
  • Ability to lead confidently during periods of transition and operational change.

Nice To Haves

  • Wine/cocktail knowledge and prior experience within hotel dining settings are a plus.

Responsibilities

  • Direct and oversee all front‑of‑house operations.
  • Ensure consistent delivery of high‑quality service throughout breakfast, lunch, dinner, and late‑night periods.
  • Maintain strong guest engagement, hospitality standards, and team professionalism.
  • Support menu transitions, seasonal updates, and guest‑driven service enhancements.
  • Implement labor management, cost controls, and financial performance strategies.
  • Collaborate closely with culinary leadership to maintain the integrity of the 25 Degrees brand.
  • Recruit, train, and develop staff while reinforcing positive culture and accountability.
