About The Position

We are seeking a motivated and reliable Pastry line cook to join our team and support our culinary team. Position Summary The Pastry Line Cook is responsible for the preparation, organization, and execution of all assigned pastry and dessert production under the guidance of the Pastry Chef and Pastry Sous Chef. This role upholds Naples Yacht Club’s pastry standards by maintaining precision, consistency, and cleanliness across all production, plating, and service responsibilities. The Pastry Line Cook supports both daily outlet operations and special events, contributing to a refined and elevated pastry program.

Responsibilities

  • Execute all pastry recipes, production methods, and plating standards with accuracy and consistency.
  • Prepare assigned mise en place for cakes, tarts, doughs, creams, sorbets, breads, chocolates, and composed desserts.
  • Organize and maintain station setup for efficiency, speed, and cleanliness during service.
  • Ensure all mise en place is properly labeled, stored, and rotated at the end of each shift using FIFO standards.
  • Assist with AM or PM production needs, including banquet dessert execution and special event prep.
  • Maintain full DOH compliance in all pastry areas, including production, storage, and service.
  • Follow all sanitation, hygiene, and uniform standards established by the Club.
  • Participate actively in daily and weekly cleaning tasks to ensure a safe and organized pastry kitchen.
  • Assist in managing waste, yield, and portion control to support food cost targets within the pastry department.
  • Communicate shortage risks, prep needs, or par adjustments to the Pastry Sous Chef promptly to ensure next-day readiness.
  • Support pastry production for all outlets, large-scale events, and Club-wide programming.
  • Work collaboratively and respectfully with the pastry team, culinary team, and front-of-house partners.
  • Remain flexible and willing to assist across pastry stations and production areas as needed.
  • Uphold the standards, values, and culture of the Naples Yacht Club at all times.
  • Duties are not limited to the above and may include additional tasks as assigned by leadership
