About The Position

The Pastry Chef will oversee all donut development, production, and quality standards for a nationwide donut company headquartered in Las Vegas. This position is responsible for driving innovation, ensuring product consistency across all locations, and managing large-scale production at the commissary, existing shops, and new stores opening in multiple states. The ideal candidate will be an experienced and creative professional with a strong foundation in scratch donut making—including dough production, fillings, glazes, and icings—along with proven leadership in a high-volume commercial or retail baking environment. This role requires a balance of hands-on expertise, creativity, and operational discipline.

Requirements

  • Degree or certification in Culinary Arts, Baking, or Pastry preferred.
  • Minimum 5 years of experience as a Pastry Chef or Head Baker in a commercial donut operation or large-scale bakery environment.
  • Advanced technical skills in donut production, recipe development, and ingredient formulation.
  • Proven ability to scale recipes and maintain quality across multiple locations.
  • Strong knowledge of food safety, sanitation, and HACCP compliance.
  • Highly creative, detail-oriented, and quality-driven.
  • Exceptional leadership, communication, and organizational skills.

Responsibilities

  • Create, test, and refine new donut recipes that align with the company’s brand identity and seasonal promotions.
  • Develop innovative flavors, fillings, glazes, and decorations that appeal to a broad national market.
  • Partner with marketing and operations to plan and execute new product launches and limited-time offerings.
  • Stay current on national and international donut trends to keep the brand exciting and competitive.
  • Oversee commissary and in-store donut production to ensure consistent quality, texture, and presentation across all locations.
  • Establish and enforce standardized operating procedures (SOPs) for mixing, proofing, frying, filling, glazing, decorating, and storing all donut products.
  • Work closely with suppliers to source premium ingredients and maintain reliable supply chain standards.
  • Conduct regular audits and taste tests across stores to maintain product integrity and brand excellence.
  • Train and mentor commissary and production staff on proper donut-making techniques, dough handling, and recipe adherence.
  • Collaborate with general managers and regional leads to ensure operational consistency company-wide.
  • Develop training materials and oversee the rollout of new product procedures to all markets.
  • Partner with R&D, operations, and supply chain teams to efficiently scale recipes for national distribution.
  • Coordinate with equipment vendors to ensure all donut-making machinery is used and maintained properly.
  • Track and manage food cost, yield, and waste, identifying opportunities to improve efficiency and profitability.
