About The Position

The Dry Dock is making a comeback in Portland’s vibrant Old Port, and we’re looking for passionate and dynamic Cooks to join our team! Newly reopened in the summer of 2025, this beloved waterfront spot operated by the Luke’s Lobster team has been revitalized under the leadership of Chef Matt Ginn, “Chopped Champion” and formerly of Evo and Twelve. This is your chance to be part of an exciting new chapter, working alongside a talented team to bring the iconic Dry Dock back to life with a fresh and revitalized twist. We are seeking Culinary Professionals who are excited to be part of a brand-new opening! Ideal candidates will have experience with new restaurant openings and are eager to help shape a high-volume, multi-floor restaurant with expansive outdoor decks, and a raw bar program. We’re looking for someone with a balanced approach to maintaining high quality standards. Requirements

  • Familiarity with kitchen sanitation and safety regulations
  • Excellent organizational skills
  • Enjoyment of a fast-paced work environment
  • Flexibility to work during evenings and weekends
  • Ability to handle shellfish / tolerate exposure to shellfish allergen (required)
  • A GOOD attitude and a “team player” mentality

Responsibilities

  • Prepare and execute menu items across multiple stations with consistency, accuracy, and attention to quality
  • Collaboratively work and contribute to food preparation and technique
  • Follow food safety and sanitation standards throughout all prep and service tasks
  • Maintain a clean, organized, and well-stocked station or work area
  • Support kitchen flow by assisting teammates and adapting to shifting needs
  • Properly handle, clean, and store equipment, tools, and ingredients
  • Work with a team for shared accountability for quality standards
