Under the direction of the Supervisor Steward, the Lead Steward is primarily responsible for assisting in the cleanliness of the kitchen, service pantry, silverware, china and glassware. Operates in representation of the Stewarding team’s best in class culture, while championing the goals and priorities of the Enterprise in a manner that reflects and upholds our vision, mission and values. ESSENTIAL DUTIES AND RESPONSIBILITIES 1. Leads and assists Utility Workers in maintaining assigned culinary work areas and equipment in a clean and orderly condition for improved performance. Delegates shift station responsibilities and supervises kitchen when called upon and directed by management. 2. Responsible for overall cleanliness, organization, and preparedness of immediate workspace and assigned areas following procedures in place. Responsible for ensuring cleanliness and sanitizing various kitchen equipment, including china, glassware, flatware, and smallware, following established procedures to meet current guidelines and regulations. Conducts and maintains the cleaning, sanitizing, and disinfecting of all kitchen equipment, including but not limited to ice bins, stoves, ovens, grills, broilers, fryers, refrigerators, tables, and all stainless-steel surfaces. 3. Trains team members in chemical usage and appropriate food handling practices. Practices safe food handling and sanitation duties as directed by management. 4. Takes inventory and submits to supervisor for order requests. Reports any equipment malfunctions; maintains station in a neat and orderly manner. 5. Assists other team members as needed. Assists and completes special projects assigned in a timely manner. 6. Responsible for enforcing current health and safety regulations/guidelines. 7. Performs other duties as assigned to support the efficient operation of the department. EDUCATIONAL, EXPERIENCE AND QUALIFICATIONS High School Diploma or GED required. Minimum of two (2) years’ experience in stewarding, housekeeping or related industry required, in a Hotel or Casino & Resort setting preferred. Minimum of one (1) year experience in a lead position preferred.
