About The Position

The Lead Bartender is responsible for leading the bar program and day-to-day bar operations while delivering elevated cocktail service that reflects Mott 32’s global brand and refined Chinese culinary identity. This role blends technical mixology expertise, leadership, guest engagement, and operational discipline to ensure consistency, efficiency, and exceptional hospitality at the bar.

Requirements

  • Minimum 2 years of progressive experience in high-volume fine dining or luxury restaurants.
  • Experience in POS editing, inventory control and financial performance reviews.
  • Strong leadership, communication, and team-building skills.
  • Proven ability to maintain high standards under pressure while ensuring consistency and efficiency.
  • Strong food and beverage product knowledge
  • Ability to work nights, weekends, and holidays as required.

Responsibilities

  • Execute and uphold Mott 32 cocktail, spirit, and bar service standards at all times
  • Lead the bar team during service, ensuring smooth operations, speed, and consistency
  • Serve as the primary on-floor bar authority for cocktails, spirits, and guest recommendations
  • Maintain recipe integrity, portion control, and presentation standards
  • Collaborate with management and culinary teams on seasonal cocktails, menu development, and pairings
  • Train, coach, and mentor bartenders and barbacks on technique, service standards, and product knowledge
  • Oversee bar prep, batching, and mise en place to support high-volume service
  • Monitor beverage quality, freshness, and sanitation compliance
  • Assist with bar inventory, ordering, and cost controls in coordination with management
  • Ensure compliance with all alcohol service laws and internal policies
  • Support VIP service, special events, and private dining beverage execution
  • Represent Mott 32 Las Vegas with professionalism, confidence, and composure in all guest interactions
  • Ensure adherence to program targeted cost goals during menu curation
  • Ensure adherence to targeted ticket times and beverage check average goals
