The Kitchen Technician plays a crucial role in maintaining sanitation standards, supporting smooth operations, and creating the clean foundation that allows the team to deliver exceptional dining experiences.

Requirements

• Must obtain a current Food Handler's Card and meet health, safety, and sanitation standards at all time.
• Must be able to write simple correspondence.
• Comfortable communicating clearly and positively with both guests and teammates.
• You'll need to be available to work weekends, holidays, and evenings when we are busy.
• In this role, you'll I be required to stand for extended periods, and frequently walk, and use hands to; finger, handle, or feel objects, tools, or controls.
• The employee must regularly lift and/or move up to 50 pounds.
• Occasionally sit.
• It's important to stay calm and make good decisions under pressure, especially when dealing with stressful situations or upset people.
• Just a heads-up-the casino environment may expose you to secondhand smoke.

Responsibilities

• Make sure the space stays safe, clean, and friendly for both guests and the rest of the team; speak up and report any safety concerns to the Safety Committee.
• Maintain sparkling cleanliness throughout all food and beverage areas, ensuring a welcoming and professional atmosphere.
• Operate the Roxy's kitchen dishwasher with care, ensuring all flatware, glassware, dishes, pots, and pans are cleaned and sanitized to the highest standards.
• Handle all products in compliance with Oregon food safety regulations, supporting the safety and well-being of guests and staff.
• Properly scrape, clean, and sanitize flatware, glasses, dishes, pots, and pans, followed by safe storage in designated areas.
• Transport soiled items from wait stations and serving areas back to the dish staging area for cleaning, keeping service areas organized and efficient.
• Restock wait stations promptly with clean glassware, dishware, and utensils to keep the dining experience seamless.
• Sweep, mop, and maintain kitchen floors, including the washing of mats, to create a safe, slip-free environment.
• Use approved cleaning compounds and chemicals responsibly to complete both daily and deep-cleaning projects.
• Execute detailed cleaning tasks as outlined by cleaning schedules or as assigned by supervisors, ensuring no detail is overlooked.
• Remove trash, recyclables, cardboard, and soiled linens from kitchen areas to maintain a clutter-free, sanitary workspace.
• Clean and change the fryer system according to established schedules or operational needs, ensuring safe and consistent performance.
• Safely transport food to approved storage areas, unpackage items when possible, and organize them on shelves in ready-to-use order, following FIFO (First In, First Out) rotation practices.
• Jump in where needed to support the team and keep things running smoothly.
