Requirements

  • High school diploma or GED equivalent required.
  • Minimum of five (5) years cooking experience required with an emphasis in one of the following specialty areas: short order cooking of burgers, steaks, pastas, and breakfast items such as eggs, etc.
  • Two (2) years kitchen supervisory experience required.
  • Required to possess and maintain a valid WA State health card/food handler permit.

Nice To Haves

  • AA/AS degree in Culinary Arts preferred.

Responsibilities

  • Assists with the overall direction, coordination, and evaluation of the kitchen staff including hiring, training, career development; planning, assigning, and reviewing work performance; preparing work schedules, maintaining employee department files; addressing complaints and resolving issues from department employees.
  • Creates, develops, and maintains menus, recipes, and related product requisitions.
  • Assists with the development and implementation of department SOPs, station prep lists, and safety procedures.
  • Oversees all kitchen operations to ensure guest satisfaction.
  • Plan, direct, and supervise food preparation and cooking activities to ensure the highest quality of all menu items.
  • Develops and verifies the completion of assigned station prep lists.
  • Instruct kitchen staff in the preparation, cooking, garnishing, or presentation of food per Bingo kitchen standardized recipes.
  • Forecasts required supplies, requisitions, inspects/rotates and inventories current/received products.
  • Responsible for the specific training of line cooks in sautéing, broiling, grilling, frying, steaming, and baking.
  • Meets with vendors and recommends new products.
  • Responsible for waste, temperatures, and other health and safety logs/reports daily.
  • Coordinates and communicates with other kitchen staff.
  • Ensures that all sanitation and safety procedures are followed.
  • Responsible for establishing par levels.
  • Cooks on the line as needed.
  • Performs other duties as assigned.
