About The Position

Head Distiller Position Summary: Trillium Brewing Company is an independent family-run craft brewery and distillery looking for an experienced Head Distiller to join our team! The Head Distiller is a full-time leadership position that will report to the Director of Production. This position is responsible for distillery scheduling, the oversight of the production of spirits, as well as acting as a key contributor to the Distillery’s development process. This position will be based out of Canton, Massachusetts but will have involvement in multiple locations

Requirements

  • Bachelor’s degree in Fermentation Science, Distillation Science or like field preferred, with 6 years of distillation experience reflecting increasing levels of responsibility
  • Demonstrated experience with pot and column stills
  • Knowledge of Massachusetts and Federal regulations concerning distilled spirits
  • Proven success in all distillery departments, with a solid foundational understanding of still, cellar and packaging scheduling, planning and execution
  • Experience and understanding of the fermentation and distillation process, sanitation, yeast health , fermentation and spirit transfer, filtration and packaging
  • Experience with distillery quality assurance and control plans
  • A passion for craft spirits
  • Advanced computer proficiency including Google Suite
  • Process and results driven leader with demonstrated success managing and achieving operational and financial goals
  • Ability to monitor performance and proactively propose necessary modifications to a plan
  • Exceptional organizational skills, detail-oriented with process-oriented thinking
  • Strong capacity to both lead and participate in cross-functional teams to define issues and agree on processes, strategies, and outcomes
  • A self-motivated approach, with strong work ethic, requiring limited oversight

Responsibilities

  • Build and manage distillation production schedule to execute brand release plan, in coordination with brewery Production Manager and Packaging Manager
  • Manage all day to day distillery operations and guide support staff as assigned to accomplish spirits release plan
  • Manage recipe database to ensure accuracy of all recipe details for distillery execution in collaboration with brewery Production Manager
  • Write, update, and uphold standard operating procedures for the distillation department
  • Manage sanitation of the facility and ensure clean, sanitary equipment and working environment
  • Manage the barreling, maturation, processing and blending for packaging
  • Manage spirits quality at a fundamental level, with a focus on raw materials, process, staff training, fermentation health, equipment functionality, and distillation technique
  • Maintain logs of instrument readings, test results, and shift production and log relevant information into databases for compliance and record keeping
  • Ensure compliance with TTB and FDA regulations, ensure adherence to SOP and related distillation practices
  • Ensure all spirit products comply with formula and TTB regulations and complete batch tracking log within a timely manner from raw materials to bottle
  • Manage evaluation of raw materials for spirit quality and manage raw material inventories
  • Lead preventative maintenance schedule development and general repair plan to coordinate with Facilities team and external vendors
  • Complete, enter, and maintain daily production records in production management software and written logs
  • Test samples to evaluate key metrics using various testing equipment, collect samples of materials for lab analysis in collaboration with Quality Assurance Manager
  • Willing and able to fill in for production duties if the need arises, i.e. mash production/cellar/packaging tasks
  • Participate or lead in the sensory sessions and oversee the development of spirits flavor profiles to uphold Trillium’s standards for quality and guest experience
  • Observe all aspects of safety in the distillery area as defined by OSHA and IFC standards among others
  • Facilitate new production development in collaboration with Quality Assurance Manager
  • Lead cross-functional teams in the pursuit of creating better products, processes and procedures for the distillery
  • Interface with other departments of the organization to ensure productivity, quality and profitability in completion of distillation processes
  • Lead distillery procurement to ensure all spirits products can be processed on time, on cost and on value
  • Work closely with finance and compliance departments to ensure an understanding and adherence to applicable quality, environmental and safety regulatory considerations
  • Work with Production Manager to oversee distillery related cellar work
  • Work with the Director of Production and Quality Assurance Manager to develop business objectives and drive continuous improvement
  • Inspire passionate team culture in support of consistent execution of Trillium’s goals through contributions to the education and training programs for staf f
  • Additional duties may be assigned as necessary.
