About The Position

We are seeking a skilled Grill Cook with strong experience in scratch cooking and basic to intermediate butchery. The ideal candidate understands how to work with fresh ingredients, prepare proteins from whole cuts, and execute dishes with consistency and precision. This role requires excellent grill technique, time management, and the ability to thrive in a fast-paced, team-oriented kitchen.

Requirements

  • Proven experience as a Grill Cook in a scratch kitchen environment.
  • Demonstrated butchery skills (e.g., portioning steaks, breaking down poultry, handling raw fish or specialty cuts).
  • Strong understanding of proper cooking temperatures and protein handling.
  • Ability to work under pressure while maintaining high standards.
  • Excellent knife skills and familiarity with kitchen tools and equipment.
  • Knowledge of food safety regulations and best practices.
  • Reliability, punctuality, and strong teamwork skills.
  • Ability to stand for extended periods.
  • Ability to lift up to 50 lbs as needed.
  • Comfort working in a hot, fast-paced kitchen environment.

Responsibilities

  • Operate the grill station with expertise, including grilling, searing, roasting, and finishing a variety of proteins and vegetables.
  • Prepare menu items from scratch following established recipes and presentation standards.
  • Perform butchery tasks such as trimming, portioning, deboning, and prepping various cuts of meat and seafood.
  • Maintain quality control by ensuring accurate portioning, proper cooking temperatures, and attention to detail.
  • Assist in daily prep, including marinating, seasoning, and batch cooking as required.
  • Manage station setup and breakdown efficiently, keeping all tools and ingredients organized.
  • Uphold food safety and sanitation standards, including safe knife handling and proper product rotation (FIFO).
  • Communicate clearly with the kitchen team to coordinate timing, ticket flow, and special requests.
  • Monitor inventory levels for grill and butchery items, notifying supervisors of low or depleted stock.
  • Contribute to a clean, collaborative, and positive kitchen environment.
