About The Position

Forepaughs is seeking a talented Garde Manager The Garde Manger is responsible for the preparation, presentation, and service of cold food items in a school food service operation. This role focuses on salads, fruits and vegetables, sandwiches, wraps, cold entrées, and plated items.

Requirements

Knowledge of basic cold food preparation techniques
Ability to follow standardized recipes and written instructions
Understanding of food safety, sanitation, and cross-contamination prevention
Strong attention to detail and presentation
Ability to work efficiently in a fast-paced environment
Team-oriented with strong communication skills
Ability to stand for extended periods and lift up to 40 lbs
High school diploma or equivalent preferred
Previous food service or kitchen experience preferred
Food Handler Permit (or ability to obtain within required timeframe)

Responsibilities

Prepare cold food menu items including: Salads, dressings, and composed cold dishes
Sandwiches, wraps, and deli items
Fresh-cut fruits and vegetables
Yogurt, parfaits, and cold breakfast or lunch offerings
Follow standardized recipes and portion control guidelines to ensure meal pattern compliance
Maintain high standards of food quality, freshness, and visual presentation
Properly store, label, rotate, and date cold food products (FIFO)
Ensure compliance with food safety, sanitation, and allergen procedures
Assist with plating, packaging, and grab-and-go meal assembly
Maintain clean and organized workstations, coolers, and prep areas
Accurately complete required production records and temperature logs
Support service line operations and assist with student service as needed
Collaborate with Lead Cook or Kitchen Manager on daily production needs
