About The Position

Harrah’s Joliet Hotel & Casino is seeking a Food Operations Supervisor to lead daily operations for Tortazo—Chef Rick Bayless’ vibrant Mexican concept—and Cross Street Grill. This full-time leadership role oversees high-volume food and beverage operations, delivering exceptional guest experiences while managing team performance, labor, inventory, cost controls, safety, and compliance. The ideal candidate brings restaurant leadership experience, strong communication and coaching skills, and a passion for hospitality in a fast-paced environment. Requirements

  • 2+ years of management experience in high-volume quick-serve or casual dining preferred
  • Strong leadership, communication, and guest service skills
  • Knowledge of food cost controls and restaurant operations
  • Proficiency in Microsoft Office and POS systems (Micros preferred)
  • Flexible schedule including nights, weekends, and holidays
  • Internal candidates must meet Harrah’s Joliet transfer eligibility requirements
  • Lift and carry up to 20 lbs; occasionally up to 100 lbs
  • Work in areas with smoke, noise, bright lights, and fast-paced activity
  • Position requires: 75% walking, 15% sitting, 10% standing
  • Frequent bending, reaching, twisting, kneeling, and climbing

Responsibilities

  • Lead daily operations for Tortazo and Cross Street Grill to ensure exceptional guest satisfaction and service standards
  • Supervise, coach, and develop team members while fostering a positive, team-focused work environment
  • Manage labor scheduling and staffing levels to support efficient, high-quality service
  • Oversee food preparation and service to maintain consistency, quality, and presentation standards
  • Monitor inventory, supplies, and cost controls, including daily financial reporting and operational audits
  • Enforce appearance, safety, sanitation, and regulatory compliance standards across both outlets
  • Conduct routine inspections of service, kitchen, prep, storage, and equipment areas
  • Communicate operational updates and opportunities to Food Operations leadership
  • Support hiring, training, performance management, and team development initiatives
  • Recommend improvements to menus, procedures, and operations to enhance quality, efficiency, and profitability
