About The Position

KEY RESPONSIBILITIES Assist in managing the food and beverage team, including scheduling, hiring, training, and performance management, with a strong emphasis on wine knowledge and elevated service standards in all dining areas. Serve as the primary point of contact for the Cellar Club wine program, ensuring a high level of engagement, communication, and service for participating members. Assist with wine list development and maintenance, including updates, pricing support, and clear, accurate menu descriptions that reflect the club's standards and member preferences. Organize and host Cellar Club events, tastings, and special wine dinners in collaboration with the Director of Food and Beverage and the culinary team, ensuring seamless execution and exceptional member experience. Provide confident, informed wine recommendations to members and guests, including pairing suggestions that complement the menu and enhance the overall dining experience. Maintain proper wine handling, storage, and inventory practices, including routine cellar checks, rotation, and coordination of orders with vendors. Work closely with the Director of Food and Beverage and wine vendors on selections and pricing, bringing forward member feedback and sales trends to inform decisions. Set the tempo and tone of daily service by anticipating VIPs and special events, reviewing house counts and forecasts, organizing the restaurant for daily cover counts, and communicating key information in daily line ups and pre shifts, including featured wines and pairings. Uphold the company's commitment to superior food, beverage, and hospitality by modeling exemplary wine and service standards and holding the team accountable to them. Continuously create and implement new ideas for training and development of food and beverage staff, with a focus on wine education, pairing skills, and refined service techniques. Assist with any member or guest issues or concerns in a professional, courteous, and solutions focused manner, especially in relation to dining and wine service. Foster and promote a cooperative, positive working climate that maximizes productivity, teamwork, and employee morale across the dining room, bar, and wine focused programs. Ensure all cleaning schedules, temperature records (including wine storage), and opening and closing checklists are completed, recorded, and maintained daily. Monitor inventory levels for both general F&B and wine through regular inventory checks, helping to prevent stock outs, overstocking, and product loss. Ensure all restaurant, bar, and cellar equipment is properly handled, cleaned, and maintained by staff, and report any repair or maintenance needs promptly. Champion a clean and safe work environment by ensuring all safety, health, and food handling standards are followed consistently in all service and wine storage areas.

Requirements

  • At least three (3) years' food and beverage experience in high volume luxury resorts/ private clubs or fine dining establishments with previous role(s) in a leadership capacity.
  • Strong wine knowledge required; formal training such as Level 1 Sommelier or equivalent knowledge preferred.
  • College degree in hospitality management is strongly preferred.
  • Proven ability to manage a dining room floor and lead a service team in a high expectation environment.
  • Excellent communication and interpersonal skills, with a member focused, professional demeanor.
  • Strong computer skills, including:Jonas or ClubEssential (or similar club management software)
  • Microsoft Excel and Word
  • Knowledge of HACCP & local food safety standards.
  • Extraordinary attention to detail, quality, and service.
  • Exceptional verbal and written communication, presentation, and interpersonal skills.
  • Ability to work a flexible schedule, including evenings, weekends, and holidays, and shifts greater than eight (8) hours in length.
  • Ability to meet the physical demands of the position including, but not limited to, working indoors and outdoors, standing, walking, and moving for periods of greater than four (4) hours, and lifting, carrying, bending, stooping, squatting, reaching, pushing, and pulling.
  • Proof of eligibility to work in the United States.
  • Criminal, Civil background clearance.

  • College degree in hospitality management is strongly preferred.
  • Relevant training certifications in industry topics helpful.
