About The Position

Job Title & Location Food & Beverage Director Location: Ketchikan, Alaska (Relocation Required) A premier 107-room waterfront hotel in Ketchikan is seeking an experienced Food & Beverage Director to lead all dining operations, including a full-service restaurant, pub & grill, and banquet/catering services. This role carries full P&L responsibility and oversight of BOH and FOH leadership.

Requirements

  • 10+ years of multi-outlet F&B leadership experience
  • Proven success managing full P&L responsibility
  • Strong operational, financial, and team development skills
  • Proficiency in POS systems, inventory software, and Microsoft Office
  • Ability to thrive in a fast-paced, seasonal environment
  • Flexible schedule availability including evenings, weekends, and holidays
  • Ability to stand for extended periods and lift up to 50 lbs as needed

Nice To Haves

  • Experience in seasonal or destination markets preferred
  • Bachelor's degree in hospitality management, Business Administration, Culinary Arts, or related field preferred
  • Culinary expertise is a plus, with potential opportunity for role expansion for the right candidate

Responsibilities

  • Provide strategic and hands-on leadership across all F&B outlets.
  • Manage budgeting, forecasting, labor, and cost controls.
  • Develop seasonal menus and drive profitability in a high-volume tourism market.
  • Recruit, train, and mentor culinary and service teams.
  • Ensure compliance with food safety, alcohol service, and regulatory standards.
  • Strengthen guest satisfaction and community engagement.
  • Maintain adherence to all local, state, and federal health and safety regulations.
  • Implement and monitor HACCP and food safety programs.
  • Ensure compliance with alcohol service laws, allergen management protocols, and OSHA standards.
  • Foster a culture of safety and accountability.
  • Recruit, train, and retain high-performing culinary and service professionals.
