Requirements

  • Proven experience as an Executive Chef or in a similar role, preferably in a high-pressure luxury catering environment.
  • Culinary school degree preferred.
  • ServSafe Manager certification required.
  • Experience in fine dining preferred.
  • Strong knowledge of nutrition and dietary requirements.
  • Strong understanding of local cuisine and regional culinary traditions.
  • Strong eye for presentation and aesthetic display.
  • Excellent organizational skills and attention to detail.
  • Passion for sustainability and local sourcing.
  • Exceptional communication and interpersonal skills.
  • Ability to work long hours during peak season and maintain flexibility

Responsibilities

  • Menu Creativity: Design and execute diverse, seasonally-inspired menus that prioritize local ingredients and nutritional value. Ensure all options cater to varying dietary restrictions, including vegan and gluten-free, without compromising on quality.
  • Sustainability Practices: Implement and maintain eco-friendly practices including recycling, composting, and responsible sourcing. Aim for zero waste through effective ingredient utilization and menu planning.
  • Discretion and Professionalism: Work closely with A-level artists and their teams, maintaining confidentiality and discretion at all times.
  • Organization and Planning: Manage a fast-paced schedule during the busy season (May through October), overseeing multiple shows per week. Ensure meticulous organization of all catering logistics, including planning, shopping, and prepping for dressing room, bus stock, and hospitality riders.
  • Dietary Compliance: Strictly adhere to all dietary restrictions outlined by touring artists. Ensure nutritious, protein-dense options are seamlessly integrated into every menu, prioritizing health without sacrificing flavor.
  • Budget Management: Adhere to strict tour budgets regarding food and labor costs. Provide daily show reporting to track expenditures and ensure financial accountability.
  • Collaboration: Communicate effectively with the tour and production manager to align on catering needs, preferences, and special requests.
  • Seasonal Adaptability: Understand the cyclical nature of the role, with hands-on involvement as a working chef during the busy season (May-October) and a focus on planning and preparation during the off-season (November-April).
  • Technology Proficiency: Must be computer savvy and able to respond to emails promptly. A working knowledge of Zoom for weekly calls is required.
